Preheat the oven to 230°C/gas mark 8
- 275g plain flour, plus extra for kneading
- 1 rounded tsp bicarbonate of soda
- 1tsp salt
- 250g stoneground wholemeal flour
- 25g Irish porridge oats, plus extra for sprinkling (try Flahavan's)
- 125g Irish farmhouse cheese such as Adrahan or Carrigaline, coarsely grated
- Approximately 500ml buttermilk
donut - coconut flour donut

Preheat oven to 350 degrees F
- Ingredients (makes 6-8 donuts or cupcakes)
- 1/2 cup of coconut flour
- 1/4 teaspoon of sea salt
- 1/4 teaspoon of baking soda
- 6 eggs
- 1/2 cup of honey (or other liquid sweetener)
- 1 tablespoon of vanilla
- 1/2 cup of unsalted butter, melted (coconut oil, or regular oil will work as well)

- 1 Tablespoon granulated sugar
- 1 1/8 cups buttermilk
- 1/4 cup neutral-flavored cooking oil
- 2 Tablespoons water
- 1 cup gluten-free cornmeal

oatmeal - Coconut Cookie Dough Oatmeal

Preheat oven to 380 degrees
- 1/2 cup rolled oats
- 1/8 tsp salt
- sweetener (sugar, stevia, etc)
- 1/4 cup unsweetened applesauce or banana
- 4 drops coconut extract (you can omit)
- 1/4 tsp vanilla extract
- 1/4 cup liquid (milk of choice, water, coconut milk, etc.)
- 1 or 2 tbsp pre-melted coconut butter (see note below about a fat-free substitution)
- Optional: a handful of chocolate chips (and a few for the top, too!)

- 1 medium avocado
- 1/2 cup coconut milk (homemade or store-bought), or any milk you like
- 1/4 cup creamy unsweetened peanut butter (optional)
- 4-6 tablespoons pure maple syrup (more or less depending how sweet you want it)*
- 3 tablespoons unsweetened cocoa powder
- 2 teaspoons pure vanilla extract
- 2 pinches sea salt
- 2 tablespoons unsweetened coconut flakes (optional; for garnish)
- Instead of maple syrup, you could play around with other sweeteners like honey or stevia. Adjust the amount to taste.
cookie - Chocolate trail mix cookies

Mix the dry ingredients in a medium bowl
- 1/2 cup oats
- 3 tbs wholemeal spelt flour or GF flour of choice
- 1/2 tsp cinnamon
- 1/2 tsp baking soda
- 2 tbs cocoa powder
- 3 tbs agave syrup
- 2 tbs peanut butter (or 1 tbs oil)
- 3 tbs crushed nuts
- 3 tsp chopped dried berries (I use mixed cranberries and cherries)
- 1 tbs dark chocolate chunks or cacoa nibs
- 3 tbs soy milk or as needed to create a thick spoonable batter

- 2 cups organic brown sugar
- 1/2 cup non-dairy milk
- 1 cup creamy all natural peanut butter

Method 1 Heat a large pot of salted water, 4 quarts of water, 1 Tbsp salt
