Dark Chocolate Sea Salt Almond Bark

- 1/2 cup Swerve Sweetener
- 2 tbsp water
- 1 tbsp butter
- 1 1/2 cups roasted almonds (unsalted)
- 1/4 tsp sea salt
- 4 oz food-grade Cocoa Butter
- 2.5 oz unsweetened chocolate, chopped
- 1/2 cup powdered Swerve Sweetener, sifted
- 3/4 cup cocoa powder
- 1/2 tsp vanilla extract Additional
- sea salt for sprinkling
oatmeal - Better-n-Rice Pudding

This is so easy: Combine all the ingredients and bring to a boil
- 2 cups milk of choice
- 2 servings already-cooked oatmeal (i.e. start with 80 grams, or about 3/4cup, uncooked)
- 1 to 2 tsps cinnamon
- 1 1/2 Tbs pure vanilla extract
- up to 1 cup raisins
- Optional: up to 1/4 cup sweetener of choice (I don’t think it needs any, but when I made this for my mom, I used 1 Tbs sugar for 1/2 of the recipe.)
oatmeal - peanut butter and banana overnight oats

In a medium bowl, mash your banana with a fork
- 1 large ripe banana, mashed (about 1/2 cup)
- 1/4 cup creamy peanut butter
- 1 cup gluten-free rolled oats
- 1 cup unsweetened almond milk
- 1 tablespoon chia seeds (optional)
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 teaspoon light agave or honey (You may use more if you like sweeter oatmeal.)
- Sliced Bananas
- Drizzle of Agave, Maple Syrup or Honey
- Cinnamon
- Dark chocolate shavings or chips
- Coconut shavings

Blitz the nuts/seeds in a food processor for a few seconds until they are coarse
- 70 g dates
- 70 g raisins
- 100 g almonds (or sunflower seeds) I did use almonds to make it more aurthentic
- 50 g buckwheat flour (or oatmeal)
- 30 g dessicated coconut
- 30 g dried cranberries
- 1 tsp almond extract
- Topping (optional): 50g cashews or blanched almonds, few drops almond extract and 2 tbs agave syrup. Extra flaked almonds to decorate.

- For pico:
- 1/2 cup dried red lentils, rinsed and drained
- 1-15 oz can of chickpeas, rinsed and drained
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp sea salt, plus more to taste
- 1/2 cup packed cilantro
- 2 garlic cloves, minced
- 1 jalapeno, de-seeded and finely chopped
- 1/2 small red onion, minced
- 1 red bell pepper, very finely diced
- 1 large carrot, very finely chopped or shredded
- 1/4 cup oat bran or oat flour, gluten-free if desired
- Lettuce or Hamburger Buns, to place patty in
- 1 large ripe mango, diced
- 1 ripe avocado, diced
- 1/2 small red onion, finely diced
- 1/2 cup chopped cilantro
- 1/2 tsp fresh lime juice

Top this Coconut Sweetbread with your favorite fruit before baking
- 3/4 cups gluten free self-raising flour mix (100g)
- 1 teaspoon cinnamon
- 2 tablespoons desiccated coconut
- 1 teaspoon vanilla extract
- 1 tablespoon agave
- 1 banana (approximately 80g)
- 2 tablespoons soy milk/water (if needed depending upon size of banana)
- 1 to 2 handfuls berries/sliced fruit (I used a large nectarine)
- Sprinkling of chopped nuts/coconut flakes

In a large bowl, mix together the dry ingredients
- 1/2 cup brown rice flour
- 3/4 cup ground almonds (if making your own do not over process so that oils are released)
- 2 tbs cocoa powder
- 2 tbs tapioca flour
- 2 tbsp ground flax
- 1/2 tsp salt
- 1/2 tsp bicarbonate soda
- 1/2 tsp cinnamon
- 3 tbs cacoa nibs or dark chocolate chunks- quite finely ground
- 1 tbs water
- 1/2 tsp vanilla extract
- 2 tbs agave nectar plus 1/4 tsp stevia
- 1 tsp olive oil

Mix water, eggs, salt, honey, and vinegar in the bottom of your Bread Machine pan
- 7/8 cups Water (Mineral Water gives a slightly better rise but it not necessary) (if you don’t have a measuring cup this accurate, it’s the same as 220mL or you can measure 1 cup and remove 2 Tbsp)
- 3 eggs
- 1 tsp Salt
- 2 Tbsp Apple Cider Vinegar
- 2 Tbsp Honey
- 1/4 cup Extra Virgin Coconut Oil, melted
- 3 cups Blanched Almond Flour (this works best with a very finely milled flour such as Honeyville Farms or JK Gourmet)
- 3 cups Almond Meal (this could be a courser ground almond flour or you can make your own by grinding whole almonds in a food processor)
- 2/3 cup Tapioca Flour
- 2/3 cup Arrowroot Flour
- 2 tsp Active Dry Yeast
