chips - Sweet Potato Chips

Peel the yams. Slice the yam into thin slices using a mandolin slicer
- 1 or 2 large yams or sweet potatoes
- pinch of Celtic sea salt (used at the end of the recipe)
- tiny amount cold pressed extra virgin olive oil (use at the end of the recipe)

Preheat oven to 180°C/355°F
- Cake:
- 3/4 cup plain flour/GF flour *see note for other options
- 1/3 cup cocoa powder
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup unsweetened applesauce
- 1/3 C unrefined cane sugar/brown sugar**
- 1 tsp vanilla
- Frosting**:
- This makes a small amount of frosting as the cake doesn't need much, but for a full batch - see this Vegan Chocolate Frosting recipe.
- 1 1/2 tbsp lite Nuttelex or other dairy free butter/margarine alternative
- 1 1/2 tbsp unsweetened cocoa powder
- 1/2 cup sifted icing sugar
- 1/2 tsp vanilla

Preheat oven to 350. In a mixing bowl, beat eggs lightly
- 4 eggs
- 4 or 5 ripe bananas, mashed
- 1/2 cup coconut sugar (note this makes the loaf a little darker) (or 1 cup regular sugar)
- 1/2 cup unsweetened applesauce
- 1 tsp real vanilla extract
- 1-1/2 cups brown rice flour (I used 1 cup brown rice flour and 1/2 cup sweet potato flour)
- 1/2 cup sorghum flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/3 cup melted coconut oil (or butter)

- 200 g / 7 oz potato, cut into small chunks (about 2 medium-small potatoes, but it's best to weigh them after peeling)
- 90 g / about 3 1/4 oz cornstarch or potato starch
- 100 g / about 3 1/2 oz grated cheese - half feta and half a sharp cheese like cheddar, parmesan or gruyere (you can also try all feta, which would make them more sour)
