  • 1 cup chopped leeks, white and light green parts only
  • 1/2 teaspoon fresh thyme leaves
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 tablespoon minced fresh garlic
  • 1 stalk chopped celery
  • 1 carrot, chopped carrots
  • 3/4 cup Chicken Stock
  • 1 tablespoon tomato paste
  • 1 tablespoon good red wine vinegar
  • 1/8 teaspoon cumin
  • 4 (8-ounce) center-cut salmon fillets, skin removed
