Salmon with Lentils

Place the lentils in a heat-proof bowl and cover with boiling water
- 1⁄4 pound French green lentils (lentilles du Puy)
- 1⁄8 cup good olive oil, plus extra for salmon
- 1 cup chopped yellow onions
- 1 cup chopped leeks, white and light green parts only
- 1/2 teaspoon fresh thyme leaves
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 tablespoon minced fresh garlic
- 1 stalk chopped celery
- 1 carrot, chopped carrots
- 3/4 cup Chicken Stock
- 1 tablespoon tomato paste
- 1 tablespoon good red wine vinegar
- 1/8 teaspoon cumin
- 4 (8-ounce) center-cut salmon fillets, skin removed
Maple Pecan Crusted Salmon

In a medium saucepan, melt the butter
- 2 to 2 1/2 pounds salmon fillets
- 2 tablespoons butter
- 1/3 cup pure maple syrup
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon ground mustard
- 1/2 cup pecans
- Salt for sprinkling
- Fresh lemon wedges for serving
Quick Bread: Cranberry White Chocolate Bread

Preheat the oven to 350 degrees F
- BREAD:
- 2 cups (10 ounces) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups (6 ounces) cranberries, lightly chopped
- 1 cup (7.5 ounces) lightly packed brown sugar
- 1/3 cup oil (light olive, melted coconut, avocado, vegetable)
- 4 ounces white chocolate, melted (see note)
- 1 large egg (1.75 ounces)
- 1 teaspoon vanilla extract
- 1 cup (8 ounces) sour cream
- STREUSEL:
- 1/4 cup (1.25 ounces) all-purpose flour

- 5 tablespoons low-sodium soy sauce
- 4 teaspoons toasted sesame oil
- 2 teaspoons honey
- 1 1/4 pounds skinless, boneless chicken breasts, cut into 3/4-inch chunks
- 6 teaspoons canola oil
- 2 scallions, thinly sliced
- 1 tablespoon grated peeled ginger
- 3 cloves garlic, minced
- 1 1/4 cups low-sodium chicken broth
- 3 tablespoons sugar
- 3 to 4 teaspoons cornstarch
- 1 tablespoon rice vinegar
- 1 teaspoon chili paste
- 4 cups snow peas, trimmed
- Cooked brown rice, for serving (optional)

Mexican Pulled Pork (Carnitas)

- Pork:
- 1 (3 1/2-to 4-pound) boneless pork butt, fat cap trimmed to 1/8 inch thick, cut into 2-inch chunks
- 1 teaspoon Salt
- 1/2 teaspoons ground black pepper
- 1 teaspoon ground cumin
- 1 small onion, peeled and halved
- 2 bay leaves
- 1 teaspoon dried oregano
- 2 tablespoons juice from 1 lime
- 2 cups water
- 1 medium orange, halved & juiced
- Tortillas and Garnishes:
- 18 (6-inch) corn tortillas, warmed
- Lime wedges
- Minced white or red onion
- Fresh cilantro leaves
- Thinly sliced radishes
- Sour cream
