  • 2 cups buttermilk
  • 1/2 cup milk
  • 1 1/2 Tbsp red food coloring
  • 2 tsp vanilla extract
  • 1/4 cup unsalted butter, melted
  • Oil for griddle
  • Cream cheese glaze
  • 4 oz cream cheese softened
  • 4 Tbsp butter softened
  • 1 1/2 cups powdered sugar
  • 1/4 cup milk
  • 1 tsp vanilla extract

  • 3 tablespoons sugar (try brown sugar next time)
  • 1 3/4 cups buttermilk (I used closer to 2 cups)
  • 1 egg
  • 1 cup canned pureed pumpkin (see note about concentrating pumpkin flavor)
  • 2 tablespoons coconut or vegetable oil
