- For the base:
- 8 egg whites
- 500 g/1 lb 2oz caster sugar
- 4 tsp cornflour
- 2 tsp white wine vinegar
- 1/2 tsp vanilla extract

- 10 fresh or canned lychees (drained if canned), peeled, stones removed

Turkey Black Bean Burgers with Corny Salsa

For the salsa: In a large bowl, combine all of the ingredients and stir them together
- Corny Salsa:
- 4 large ripe tomatoes, diced
- 1 small onion, finely chopped
- 1 jalapeno pepper, seeded, de-veined, and chopped
- 3 tablespoons chopped fresh cilantro
- 1 tablespoon olive oil
- 2 tablespoons lime juice
- 1/2 (15-ounce) can black beans, rinsed, drained, and lightly mashed
- 1 cup frozen corn kernels, thawed
- Burgers:
- 1/4 cup olive oil
- 1 1/4 pounds ground turkey
- 1/2 (15-ounce) can black beans, rinsed, drained, and lightly mashed
- 1 cup crushed tortilla chips
- 2 teaspoons The Lady and Sons House Seasoning, recipe follows
- 2 teaspoons chile powder
- 2 teaspoons ground cumin
- colby cheese slices, melted on top
- 1 avocado, halved, peeled, pitted, and firmly diced, for serving

Preheat oven to 325 degrees
- 2 - 2 1/2 cups old-fashioned oats (use 2 1/2 if using corn syrup & honey)
- 1/2 cup chopped almonds
- 1/2 cup wheat flour
- 1/4 teaspoon salt
- 1/4 cup coconut oil or butter, melted
- 1/2 cup brown sugar (or use 1/4 cup corn syrup + 1/4 cup honey + 1/4 cup brown sugar)
- 1/4 cup mango nectar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground ginger
- 2 teaspoons vanilla extract
- 3 oz. dried mango, finely chopped

Preheat the oven to 475 degrees and lightly grease a mini muffin tin
- Meatballs:
- 1 1/2 pounds ground turkey
- 1/4 cup breadcrumbs (panko, homemade, or storebought)
- 2 tablespoons milk
- 2 cloves garlic (about 2 teaspoons), finely minced or pressed through a garlic press
- 1-2 teaspoons minced fresh ginger
- 2 tablespoons low-sodium soy sauce
- (maybe try a little gelatin mixed with soy sauce to keep meatballs moist)
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 green onions, white and green parts finely chopped
- Orange Glaze:
- 1/2 cup water
- 1/2 cup orange juice
- 1 teaspoon sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon low-sodium soy sauce
- 1/2 tablespoon fresh orange zest
- 1/4 cup brown sugar
- 1/2 teaspoon grated fresh ginger
- 1 clove garlic (about 1/2 - 1 teaspoon) finely minced or pressed through a garlic press
- 1 1/4 tablespoons cornstarch

- 1 tablespoon (1 turn around the pan) extra-virgin olive oil
- 1 /2 to 2 /3 pound bulk sweet Italian sausage
- 1 /2 to 2 /3 pound bulk hot Italian sausage
- 3 cloves garlic, crushed
- 1 small onion, finely chopped
- 1 can (28 to 32 ounces) chunky style crushed tomatoes
- 1 can cannellini beans, rinsed and drained
- 20 leaves fresh basil, torn
