Smoothie: Tropical Green Smoothie

I promise this smoothie doesn't taste healthy or green
- 1 cup frozen spinach
- 1 cup frozen pineapple chunks
- 1 cup frozen mango or peach chunks
- 1 medium ripe banana, peeled (previously frozen in chunks is ideal)
- 1 cup milk (cow's, almond, soy, coconut)
- 1 teaspoon+ vanilla extract or 2 Tbsp. vanilla syrup
- Sweetener, to taste (I used 1 Tbsp. agave nector and 2 Medjool dates)
Fruit Filled Mini Toaster Pastries

Makes 16 mini or 8 large toaster pastries
- 5 tablespoons cold water
- 1 tablespoon apple cider vinegar
- 2 cups all-purpose flour, plus more for rolling out the dough
- 1 tablespoon granulated sugar
- 1/8 teaspoon fine sea salt
- 1 1/4 sticks cold unsalted butter, cut into small pieces
- 2 cups fresh strawberries, quartered or 2 cups raspberries or 2 cups blackberries
- 2 to 4 tablespoons sugar (depending on sweetness of fruit)
- Grated zest and 1 tablespoon juice from 1 lemon
- 2 teaspoons cornstarch
- 2 tablespoons strawberry, raspberry or blackberry jam
- 1 tablespoon milk, plus more for brushing

- Oat Cookie Crust:
- Nonstick vegetable oil spray
- 9 tablespoons (1 stick plus 1 tablespoon) unsalted butter, room temperature, divided
- 5 1/2 tablespoons (packed) golden brown sugar, divided
- 2 tablespoons sugar
- 1 large egg
- 3/4 cup plus 2 tablespoons old-fashioned oats
- 1/2 cup all purpose flour
- 1/8 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/4 teaspoon (generous) salt
- Filling:
- 3/4 cup sugar
- 1/2 cup (packed) golden brown sugar
- 1 tablespoon nonfat dry milk powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, melted, cooled slightly
- 6 1/2 tablespoons heavy whipping cream
- 4 large egg yolks
- 1 teaspoon vanilla extract
- Powdered sugar (for dusting)
Granola: Pumpkin Granola

Preheat the oven to 325 degrees F
- 2 1/2 cups rolled oats (try cutting down to 2 cups)
- 1/3 cup pumpkin seeds
- 1/3 cup chopped pecans, almonds or walnuts
- 1/3 cup pumpkin puree
- 1/3 cup light brown muscovado sugar (I just use brown sugar)
- 1/4 cup maple syrup (try adding additional 1 T molasses)
- 1 tablespoon canola oil (up to 2 Tablespoons & try coconut oil)
- 2 teaspoons pumpkin pie spice (up to 1 Tablespoon)
- 1/2 teaspoon vanilla extract (up to 1 teaspoon or more)
- 1/2 cup dried cranberries, optional
