Nacho Pot Pie

- 3 cups chicken broth (use 32 oz carton)
- 1/2 cup butter or margarine
- 2 med. carrots, cut into 1/4 inch slices
- 2 shallots, finely chopped (1/2 cup)
- 3 cloves garlic, finely chopped
- 2 Tbsp Taco seasoning mix
- 3/4 tsp freshly ground pepper
- 1/2 tsp salt
- 1/2 cup all purpose flour
- 1/4 cup whipping cream
- 2 cups shredded deli rotisserie chicken
- 1 can (15 oz) black beans drained, rinsed
- 1 bag (12 oz) Green Giant Steamers Niblets frozen corn, thawed
- 4 cups crushed tortilla chips
- 1 cup shredded Mexican cheese blend (4 oz)
Watermelon and Tomato Salad

This is amazingly good. I was hesitant to serve if but was told it was delicious
- 5 cups (3/4-inch) seeded watermelon cubes (I buy seeless watermelon and remove any small seeds)
- 1 1/2 pounds ripe tomatoes, cut into 3/4-inch cubes ( peel the tomatoes some times)
- 3 teaspoons sugar
- 1/2 teaspoon salt
- 1 small red onion, quartered and very thinly sliced
- 1/2 cup red wine vinegar
- 1/4 cup extra virgin olive oil
- Romaine lettuce leaves (optional)
- Cracked black pepper to taste

Preheat oven to 325. Cream margarine and cheese with an electric mixer
- 1 3/4 sticks Land o Lakes Margarine (NOT BUTTER)
- 8 oz sharp cheddar cheese, grated and at room temp.
- 1/2 tsp cayenne pepper
- 2 cups plain flour, not sifted
Grits casserole (cheddar cheese)

- 1 cup uncooked quick cooking grits
- 1 large eg, lightly beaten
- 2 cups (8 0z) shredded sharp CHeddar cheese
- 1 tsp salt

Makes 2 cups refrigerate after using
- 2/3 cup Coleman's dry mustard
- 1 cup sugar
- 3 eggs
- 2/3 cup champagne vinegar
Beef and Broccoli

NY Times - recipe- Chinese
- 1/2 1/2 1/2 c Xhzoxing rice wine, dry sherry, or sake
- 3 3 2 T plus 2 t soy sauce
- 1 1 1 T cornstarch
- 1 1 1 lb cheikh or rib steak sliced thin against the grain
- 1/4 1/4 1/4 c oyster sauce
- 1/2 1/2 to 1/2 chili garlic sauce or to taste ( I use 1/2 t
- 1/2 1/2 1 cup plus 1 T neutral oil, like canola, grapeseed or peanut
- 1 1 1 lb broccoli, the head cut into florets and the stems peeled and cut into planks
- 2 2 2 T unsalted butter
Carole's Caviar Pie

Grease a pie plate or mold with oil
- egg layer:
- 1 envelope knox gelatine Dissolve in
- 1/4 cup water water
- 4 hard cooked eggs, chopped
- 1/2 cup Hellmans
- 1/4 cup fresh Parsley, chopped
- salt, pepper and tabasco to taste
- 2 TBSP Gelatine mixture
- Avocado layer:
- 1 frozen tin Avocado
- 1 shallot, minced
- 2 TBSP fresh lemon juice
- 2 TBSP Hellmans
- 1 TBSP Gelatin mixture
- Top Layer:
- 1 cup sour cream
- 1/4 cup chopped onion
- 2 TBSP Gelatin mixture

Cheesy Potato Gratin

Preheat oven to 300 degrees Melt 4 TBSP of the butter in a large, oven safe highsided skillet over med high heat
- 6 Tbsp unsalted butter
- 1/3 cup all purp flour
- 1 quart milk
- 3 cups shredded sharp cheddar cheese
- 3 cups shredded Gruyere cheese
- 2 cloves garlic, smashed
- 1/2 tsp freshly ground pepper
- kosher salt
- 1/2 tsp freshly grated nutmeg
- 7 Med Yukon gold potatoes, unpeeled, cut in 1/2 inch thick coins
- 1/4 cup chopped fresh parsley, for garnish
