Chicken Vegetable Soup

- 1 whole chicken, cut up or 4 - 6 Chicken Breasts
- 4 stalks of celery
- 4 to 6 carrots, peeled and grated
- 2 large potatoes- peeled and diced
- 1 med can tomatoes (Cut up) or one can tomato juice
- 1 small can tomato paste (optional)
- 1 to 2 boexes frozen peas or baby limas
- 1 to 2 cans shoepeg corn
- 2 T sugar
- 1 T Salt to taste
- Freshly ground pepper
- 6 T butter
Baked Stuffed Yellow Squash Boats

- 4 yellow squash
- 1 med onion diced
- 3 garlic cloves, minced
- 1 TBsp dried italian seasoning or 3 Tbsp fresh herbs (basil, oregano)
- kosher salt and fresh ground pepper to taste

- 2 Cups Japanese style panko Breadcrumbs
- 1/2 cup parmesan cheese, grated
- 1 egg
Cauliflower Roasted with Parmesan

Heat oven to 425 Line a large baking pan with foil, spray lightly with cooking spray In a large bowl or food stor
- 1 small to medium head of cauliflower cut into florets (about 6 cups)
- 2 tsps crushed garlic
- 4 Tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 12 cup freshly grated parmesan cheese
SAUTEED SHRIMP

In a large saute' pan over med
- 3 TBSP olive oil
- 1/4 cup minced garlic
- 1 lb (21-25) shrimp, unpeeled
- 2 TBSP lemon juice
- 1/2 cup fish stock
- 2 tsp chopped fresh basil
- 2 TBSP spicy seafood seasoning
Watermelon Salad with Tomato and Cucumber

Combine the watermelon, tomatoes and cucumber in a large bowl
- Half a watermelon, cubed my watermelon was medium in size
- 2-3 2-3 handfuls of small tomatoes or 2-3 larger ones sliced into wedges
- One cucumber, chopped into bite size pieces
- 1-2 oil about 1-2 Tbsp
- salt and pepper
- 5-10 basil about 5-10 leaves chopped
- 4 recipe calls for 4 oz crumbled goat cheese, I left this out, because we were having another cheese based side dish.
Mashed Potatoes, Make Ahead

Place potatoes in a large pot and pour in cold water to cover by 1"
- 4 lb med yukon Gold potatoes scrubbed
- kosher salt
- 2/3-1 cup heavy cream
- 2/3-1 cup whole milk
- 1 1/4 cups (2 1/2 sticks) unsalted butter cut into pieces
- 1/2 cup sour cream
- Freshly ground pepper

Whisk first 5 ingredients in small bowl to blend
- 1/2 cup olive oil
- • 6 tablespoons fresh lemon juice
- • 1/3 cup chopped fresh Italian parsley
- • 3 garlic cloves, crushed
- • 1 tablespoon minced fresh rosemary
- • 6 8- to 10-ounce loin or rib veal chops, each about 1 inch thick
- Topping
- • 3 tablespoons chopped fresh Italian parsley
- • 1 tablespoon grated lemon peel
- • 1 1/2 teaspoons minced fresh rosemary
- • 1 teaspoon minced garlic

Pork Tenderloin and spinach salad with pickled peaches

Pickled Peaches- Put the pickling spices in the center of a square cheesecloth
- PICKLED PEACHES
- 2 teaspoons pickling spices
- 1/2 cup fresh orange juice
- 1/2 cup sugar
- 1/2 cup maple syrup
- 1/4 cup cider vinegar
- 3 peaches, sliced
- DRY RUB
- 1 tablespoon dark brown sugar
- 2 teaspoons salt
- 1½ teaspoons paprika
- 1/4 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon freshly ground black pepper
- 1 pinch ground cinnamon
- 1 pinch ground ginger
- LIQUID SEASONING
- 3 tablespoons soy sauce
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon fresh lemon juice
- 4 teaspoons dark brown sugar
- 1/4 teaspoon garlic powder
- 1/4 teaspoon freshly ground black pepper

- 4 tsp estra virgin olive oil divided
- 1 tsp butter
- 1/2 tsp salt
- Freshly ground pepper to tast
- snipped fresh chives for garnish
