Sauteed Shredded Brussels Sprouts

- 2 pounds brussels sprouts
- 2 tablespoons (1/4 stick) butter
- 3 tablespoons extra-virgin olive oil
- 2 1/4-inch-thick slices smoked ham (about 6 ounces), coarsely chopped
- 1 large garlic clove, minced
- 2/3 cup low-salt chicken broth
- Coarse kosher salt
- 1/2 cup pecans, toasted, chopped
Mashed Potatoes, Make Ahead

- 2/3-1 cup heavy cream
- 2/3-1 cup whole milk
- 1 1/4 cups (2 1/2 sticks) unsalted butter cut into pieces
- 1/2 cup sour cream

Oatmeal Muffins

Preheat ovent to 375 dgrees
- 1 1/2 cups quick cooking oats
- 1 cup whole wheat flour
- 1/2 cup chopped pecans
- 1/2 cup packed dark brown sugar
- 1/4 cup sugar
- 2 T natural oat bran
- 2 T wheat germ
- 1 1/2 t baking soda
- 3/4 teaspoon baking soda
- 1 cup buttermilk
- 1/2 cup cup canola oil
- 1 large egg
- 1 t vanilla extract
- 1/3 cup boiling water
- 1 1/2 fresh or frozen wild blueberries
Spinach Salad with warm bacon dressing

Remove the stems from the spinach and wash, drain and pat dry thoroughly
- 8 oz young spinach
- 2 large eggs
- 8 pieces thick sliced bacon chopped
- 3 T red wine vinegar
- 1 t sugar
- 1/2 t Dijon mustard
- Kosher salt and freshly ground pepper
- 4 large with mushrooms, sliced 3 oz red onion (1 small) very thinly sliced
Italian Zucchini Crescent pie

Heat oven to 375. In 12 inch skillet, melt butter over medium high heat
- 2 Tbsp butter
- 4 cups thinly sliced zucchini
- 1 cup chopped onion
- 2 TBSP dried parsely flakes
- 1/2 tsp salt
- 1 / tsp pepper
- 1/4 tsp garlic powder
- 1/4 dried basil leaves
- 1/4 tsp dried organ leaves
- 2 eggs well beaten
- 2 cups shredded muenster or mozzarella cheese
- 1 can refrigerated crescent dinner rolls
- 2 tsp yellow mustard

- 5 TBSP unsalted butter
- 4 red Anjou pears, cored and cut into 1/4 inch slices
- 4 celery stalks, cut into 1/2 inch dice
- 2 yellow onions, cut into 1/2 inch dice
- 6 garlic cloves minced
- 2 jars(each 2 lb) butternut squash puree
- 4 cups chicken broth, plus more if needed
- 2 tsp minced fresh thyme
- kosher salt and freshly ground pepper, to taste
- 1 cup half and half
Pan Fried Okra, Onion and Tomatoes

Cut okra in half lengthwise Pour 1/4 cup of oil into a large skillet over med high heat
- 2 lbs, fresh okra
- 1/2 cup vegetable oil
- 1 med red onion, thinly sliced
- 2 large tomatoes, seeded and thinly sliced
- 2 TBSP lime juice
- 1 1/2 tsp salt
- 1 1/2 tsp pepper
- 1 tsp chicken bouillon granule

- 3 its water
- 1/2 cup mayo
- 1/2 cup sour cream
- juice of one lemon
- 6 sprigs fresh dill minced or 2 tsp dried dill
- salt and pepper to taste
