Red Velvet Layered Cheesecake

Preheat the oven to 350 F
- For the cheesecake:
- 2 oz. white chocolate, chopped
- 16 oz. cream cheese, room temperature (2 packages)
- 1/2 cup + 2 tbsn. sugar
- 1 tbsn. flour
- 2 eggs, room temperature
- 1 tsp. vanilla
- 1 tbsn. heavy cream
- For the cake:
- 2 1/2 cups cake flour
- 1 1/2 cups sugar
- 1 tsp. baking soda
- 1 tbsn. cocoa powder
- 1 tsp. salt
- 2 eggs
- 1 1/2 cups vegetable oil
- 1 cup buttermilk
- 2 tbsn./ 1 oz. red food coloring
- 1 tsp. vanilla
- 1 tsp. white distilled vinegar
- For the cream cheese frosting:
- 16 oz. cream cheese/ 2 blocks, room temperature
- 8 tbsn./ 1 stick unsalted butter, room temperature
- 1 tsp. vanilla
- 2 1/2 - 3 cups powdered sugar
- pinch of salt
Chilled Sesame Asparagus

Cook asparagus in boiling water about 4 to 5 minutes or until crisp-tender
- 1 1/2 to 2 pounds fresh asparagus, trimmed
- 2 tablespoons plus 2 teaspoons dark sesame oil
- 1 tablespoon plus 1 teaspoon rice vinegar
- 1 tablespoon plus 1 teaspoon soy sauce
- 1 teaspoon sugar
- 1 tablespoon sesame seeds, toasted
Garlic Mashed Potatoes

1) Preheat oven to 375°F
- 2 1/4 lb. russet or Yukon Gold potatoes
- 1 whole garlic bulb
- 1 tbsp. olive oil
- 1/2 cup sour cream
- 2 tbsp. (1/4 stick) butter
- 1/8 tsp. salt
- 1/8 tsp. black pepper
- Fresh chives
Blueberry Buckle

Mix together margarine and sugar, beat in egg, then add dry ingredients
- Topping:
- 1/4 cup margarine
- 1/2 cup white sugar
- 1 egg
- 1 cup flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/3 cup milk
- 2 cups fresh or frozen blueberries
- 1/3 cup white sugar
- 1/3 cup flour
- 1/4 cup margarine
- 1/2 teaspoon cinnamon
Black Bean and Corn Salad

Combine all ingredients in a bowl
- 1 can, 14 ounces, black beans, rinsed and drained
- 2 cups frozen corn kernels
- 1 small red bell pepper, seeded and chopped
- 1/2 red onion, chopped
- 1 1/2 teaspoons ground cumin
- 2 teaspoons hot sauce (recommended: Tabasco)
- 1 lime, juiced
- 2 tablespoons vegetable or olive oil
- Salt and pepper
Scotch Eggs

a hardboiled egg encased in sausage meat, rolled in breadcrumbs and then fried
- 6 hard-boiled eggs, well chilled (i try to cook them to just past soft boiled stage, then stick them in the coldest part of the fridge to firm up)
- 1 pound good quality sausage meat
- 1/2 cup All Purpose flour
- 1-2 eggs, beaten
- 3/4 cup panko-style bread crumbs
- Vegetable oil for frying
Twice Baked Sweet Potatoes

Preheat oven to 375 degrees F
- 6 sweet potatoes, even in size and scrubbed
- 4 tablespoons brown sugar
- 4 tablespoons butter, room temperature
- 4 ounces cream cheese, room temperature
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- Salt and freshly ground black pepper
Sugar Cookie Icing

This icing dries hard and shiny and the colors stay bright
- 1 cup confectioners' sugar
- 2 teaspoons milk
- 2 teaspoons light corn syrup
- 1/4 teaspoon almond extract
- assorted food coloring
Simple Tomato Sauce

In a large casserole pot, heat oil over medium high heat
- 1/2 cup extra-virgin olive oil
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 1 stalk celery, chopped
- 1 carrot, chopped
- Sea salt and freshly ground black pepper
- 2 (32-ounce) cans crushed tomatoes
- 4 to 6 basil leaves
- 2 dried bay leaves
- 4 tablespoons unsalted butter, optional
Peppered Steak with Blackberry Sauce

1 MIX lemon juice, oil, onion and garlic in large resealable plastic food storage bag
- 1/3 cup lemon juice
- 1/3 cup Pure Vegetable Oil
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 4 (4 to 6 oz.) beef tenderloin or eye of round steaks, trimmed of fat
- Salt and coarsely ground black pepper
- No-Stick Cooking Spray
- 1/2 cup Seedless Blackberry Jam
- 1/4 cup red wine vinegar
- 1/4 teaspoon onion powder
- 1/4 cup fresh or thawed frozen blackberries
