Clam Bake

1) Bring wine and 1 1/2 cups of water to a boil
- 2 1/2 cups chardonnay
- 10 cloves of garlic, peeled, whole
- 2 shallots, peeled, sliced
- 1 leek, sliced, white and green parts
- 15 small red potatoes
- 20 clams
- 2 lemons, quartered
- 1 pound shrimp, frozen
- handful of kale
Gazpacho

Blend all ingredients in a blender
- 4 cups tomato juice
- 1 onion, minced
- 1 green bell pepper, minced1 cucumber, chopped
- 2 cups chopped tomatoes
- 2 green onions, chopped
- 2 cloves garlic, minced
- 3 tablespoons fresh lemon juice
- 2 tablespoons red wine vinegar
- 1 teaspoon dried tarragon
- 1 teaspoon dried basil
- 1/4 cup chopped fresh parsley
- 1 teaspoon white sugar
- 1/4 to 1/2 of a jalepeno
- salt and pepper to taste
Meatloaf in Potato Crust

1) Combine all ingredients (except potatoes, milk, and garlic) and bake in a 9 x 4 in

- 1 lb ground beef
- 1/2 c bread crumbs
- 1 egg
- 1 red pepper, diced
- 1 T dark spicy mustard
- 1 T ketchup
- 1 t salt
- 1/2 t black pepper

- 3/4 c dried cranberries
- 1 c frozen peas, thawed
- 1/4 c walnuts, chopped

- Freshly ground black pepper
Picklese

1) Mix altogether in a jar and allow to sit 24-48 hours
- 6 scotch bonnet peppers or habanerra, with stem off and
- cut into 4 pieces
- 2 c cabbage, shredded

- 4 cloves whole
- 1 t salt
- 8-10 peppercorns

1) Combine flour, baking powder, baking soda, and nutmeg
- 2 c whole wheat pastry flour
- 2 t baking powder
