Tuna Mac

1) Cook macaroni and drain
- 1 c dry macaroni
- 7 oz tuna, drained
- 1 c tomato sauce
- 1/2 c cottage cheese
- 1/4 c plain yogurt
- 1 onion, chopped
Bread Pudding

1) Combine butter and evaporated milk
- 24 oz evaporate low fat milk
- 1 T butter, melted
- 28 oz day old Italian bread or French bread
- 4 c low fat milk
- 1 c raisins
- 3/4 c sugar
- 1/4 t salt
- 2 t cinnamon
- 1/2 t nutmeg
- 1 t vanilla
- 5 eggs
Curried Okra

- 1 onion
- 1 T ginger root, grated
- 2 cloves garlic, minced
- 2 t curry powder
- 1 can chick peas, drained
- 16 oz can whole tomatoes, undrained
- 2/3 c water

Veggies, Beef, and Polenta

1) Bring 1 cup water to a boil
- 1/3 cup corn meal
- 3/4 lbs ground beef
- 1 onion, minced
- 1 zucchini, minced
- 1 carrot, minced
- 1 celery stalk, minced
- 1 garlic clove, minced
- 1 red bell pepper, minced
- 2 t chili powder
- 1 t cumin
- 1/2 t cinnamon
- 1 c salsa
- 1/2 c frozen corn
- 2 T ketchup
- 1/3 c cheddar cheese, shredded
Sake Tea

1) bring water to boil 2) add tea bags, mint, and honey and lower heat to simmer for 5 min 3) Refrigerate 4) Add
- Lime Green Iced Tea
- 1/2 c fresh mint
- 2 green tea bags
- 2 t honey
- 4 c boiling water
- 1 c sake
- Juice of 1 lime
Vegetable Bake

Carmel Pecan Pie

1) Beat together eggs and sugar
- 9 inch pie shell, unbaked
- 3 eggs
- 2/3 c sugar
- 1/4 c butter, melted
- 12 oz jar caramel
- 1 1/2 c pecan halves
Beef Lettuc Wraps

1) Marinade beef and seasonings for 1+ hours
- 12 oz boneless sirloin steak, cut in slivers
- 2 T soy sauce
- 1/2 in. ginger root, grated
- 1 garlic clove, minced
- 1/4 t ground anise
- 1/4 t star anise
- 1/4 in. cinnamon stick
- 1 1/4 t whole cloves
- 1 1/2 t fennel seeds
- 1 t chili sauce
- 6 green onions, 1 inch pieces
- 1 red bell pepper, sliced
- 1/2 t cornstarch
- 8 lettuce leaves
Tofu Stir-fry with Noodles

- 1 package extra-firm tofu, cut in 1/2 inch pieces
- 2 red peppers, sliced
- 1 small cabbage, shredded
- 2 garlic cloves, minced

- 1/4 c soy sauce
- 1/4 c rice vinegar
- 6 oz vermicelli noodles
