- 1 c butter
- 1 c sugar
- 1 c brown sugar

Lentils

1) Simmer lentils, water, bouillon, and bay leaf 20 min
- Curried:
- 1 c lentils
- 2 1/2 c water
- 2 bullion cubes
- 1 bay leaf
- 1/4 c butter
- 1 onion, chopped, sauteed in butter with garlic
- 1 clove garlic, minced
- 2 T curry powder
- 2 T lemon juice
- Sweet and Sour:
- 1/4 c apple juice
- 1/4 c cider vinegar
- 1/4 c brown sugar
- 1 clove garlic, minced
- 1/8 t cloves
- sauteed onion
Magic Peanut Butter Middles

1) Mix flour, cocoa and baking soda
- 3 c flour
- 1 c cocoa
- 1 t baking soda
- 1 c sugar
- 1 c margarine
- 1/2 c peanut butter
- 2 t vanilla
- 2 eggs
- 1 1/2 c powdered sugar
- 1 1/2 c peanut butter
African Sweet Potato Soup

Saute onion and garlic. Add remaining ingredients and simmer 10-15 min
- 1 onion
- 2 garlic cloves, minced
- 1 qt chicken stock
- 1 sweet potato, cubed
- 1 potato, cubed
- 1 can diced tomatoes
- 1 t cinnamon
- 1 t cumin
- 1 t curry powder
- 1/4 t cayenne
- 1/4 c peanut butter
Mu Shu Soup

1) Stir fry shrimp. Add mushrooms, carrots, and garlic and cook 2 min
- 1 lb shrimp, peeled and deveined
- 1/2 lb shiitake mushrooms, sliced
- 1 c carrots, shredded
- 4 garlic cloves, minced
- 1 small savoy cabbage, shredded
- 13 oz pot stickers
- 6 green onions, cut in 1 inch pieces
- 1/3 c tamari
- black pepper
- 8 c chicken stock
- 2 eggs, beaten
Indian Chicken Curry

1) Mix seasonings. Combine with chicken and refrigerate 1 hr
- 2 t coriander
- 2 t cumin
- 1 t turmeric
- 1/2 t pepper
- 1/8 t cayenne pepper
- 2 T oil
- 1 lb chicken cubes
- 1 onion, chopped
- 2 tomatoes, chopped
Hard Tack Bun

1) Mix flour, brown sugar, salt, and Crisco
- 4 c flour
- 2 c brown sugar
- pinch salt
- 3/4 c Crisco
- 1 t baking soda
- 1 t vinegar
- 1 c milk
Fattoush Salad

1) Toast pita in 375 degree oven for 6 min
- 3 pitas, torn in pieces
- 1/2 c chopped parsley
- 1/2 cucumber, chopped
- 1 green pepper, cubed
- 4 celery stalks, chopped
- 1/2 red onion, chopped
- 3 tomatoes, diced
- 1/2 lb feta, crumbled
- 6 pepperoncini peppers
- juice of 2 lemons
- 3 T oil
Italian Salad

Combine the dressing ingredients and toss with salad
- Dressing:
- 10 oz Italian blend lettuce
- 1/4 c oil
- 1 T dried basil
- 2 T red wine vinegar
- 2 t Parmesan cheese
- 1 t prepared yellow mustard
- Salad:
- 3 plum tomatoes, sliced
- 4 oz mozzarella cheese, cut in 1/2 inch strips
