Peanut Butter Eggs

Mix together all ingredients (except chocolate)
- 3 1/2 c powdered sugar (1 lb)
- 1 1/2 c peanut butter
- 4 oz cream cheese
- 1/2 c margarine
- 1/2 t vanilla
- dipping chocolate
Secret Chocolate Cake

1) Puree beets and applesauce
- 2 c beets, boiled and chopped
- 1/2 c applesauce
- 1 1/2 c sugar
- 1/2 c oil
- 1/2 c plain yogurt
- 3 eggs
- 1 1/2 t vanilla
- 2 1/2 c whole wheat flour
- 1/2 c cocoa
- 1 1/2 t baking soda
- 1/2 t salt
- 1 c chocolate chips

Cinnamon Buns

Great for snow days!
- Filling:
- 2 packages of yeast
- 2/3 c butter
- 1/2 c sugar
- 1 t salt
- 1 c mashed potatoes
- 1 c milk, heated slowly and then cooled
- 2 eggs, well-beaten
- 6-7 c flour
- 1/2 c butter
- brown sugar
- cinnamon
- Topping:
- 1 c margarine
- 1 c brown sugar
- 1/2 c kero
African Sweet Potato Soup

Saute onion and garlic. Add remaining ingredients and simmer 10-15 min
- 1 onion
- 2 garlic cloves, minced
- 1 qt chicken stock
- 1 sweet potato, cubed
- 1 potato, cubed
- 1 can diced tomatoes
- 1 t cinnamon
- 1 t cumin
- 1 t curry powder
- 1/4 t cayenne
- 1/4 c peanut butter
Peanut Butter Icing

Mix all ingredients together
- 3-4 c confectioners sugar
- 2 T milk
- 1/3 c butter
- 1 t vanilla
- 1/2 c peanut butter
Shoo-fly cake

1) Combine molasses and baking soda with 2 c boiling water
- 1 c dark molasses or turkey table syrup
- 1 T baking soda
- 2 c brown sugar
- 4 c flour
- 3/4 c oil
- 1/4 t salt
Naan Bread

1) Mix 1/4 c warm water, yeast, and sugar
- 1 T yeast
- 1 T sugar
- 1/4 c plain yogurt
- 1 egg
- 2 T oil
- 2 t salt
- 5+ c bread flour
Pizza Rice Casserole

1) Brown turkey, onion, garlic, and pepper
- 2 c cooked rice
- 3/4 lbs ground turkey
- 1 onion, chopped
- garlic
- black pepper
- 2 c tomatoes, chopped
- oregano
- 1 1/2 c cottage cheese
- 1/2 c cheddar cheese, shredded
Mini-Quiches

1) Use a cookie cutter to cut 2 1/2 inch circles in the pie crusts (about 12 per crust)
- 1 15 oz package of refrigerated pie crusts
- 1 1/2 c cheddar cheese, shredded
- 2 T green onion, chopped
- 1 T pimientos, chopped
- 2 eggs
- 1/2 c milk
- 1/4 t salt
- dash nutmeg
Southwest Corn Chowder

1) Cook onion, corn, and broth for 10 min
- 1/2 c onion, chopped and sauteed
- 2 1/2 c corn
- 3 c chicken broth
- 1 red pepper, chopped
- 1 tomato, chopped
- Juice from 1/2 lime
