Seared Cod with Potato veggie salad

Blue Apron
- 2 fish fillets
- 10 ounces fingerling potatoes, cut into rounds
- 3 ounces radishes, sliced
- 1 bunch asapargus, 2 inch pieces
- 1 lemon
- 1 bunch tarragon
- 1 shallot
- 1 T capers
- 1 T dijon mustard
- 2 T olive oil
Tomato Basil Pasta

1) Combine all ingredients, except pasta, and let stand 1+ hour(s)
- 4 cloves garlic
- 2 lbs tomatoes
- 1/2 c fresh basil
- 1/4 c oil
- 1 lb pasta
Moroccan short ribs

1)Combine the garlic, ginger, cumin, cinnamon, and black pepper and rub on the meet
- 1-2 lb beef short ribs (try to find another type of beef - maybe stewed beef)
- 4 cloves garlic, sliced
- 1 T fresh ginger, grated
- 2 t cumin
- 1/2 t cinnamon
- black pepper
- 14.5 oz can diced tomatoes
- 1/2 c dried apricaots, halved
- couscous
Hot Fudge Sauce

1) Microwave all ingredients and 2 T water for 1 1/2 min
- 1 c chocolate chips
- 2 T butter
- 14 oz sweetened condensed milk
- 1 t vanilla
Soup Dumplings

1) Mix ingredients until without lumps and mold into dumplings
- 2 1/4 c flour
- 1 t salt
- 1 c water
Quinoa and Ginger Carrots

1) In a saucepan, cook onion, garlic, carrots, ginger, and oil for 5 min
- 1 small onion, chopped
- 4 cloves garlic, minced
- 2 large carrots, chopped
- 1 T ginger root, grated
- 1 T oil
- 2 c quinoa
- 4 c water
Strawberry Bread

1) Mix all ingredients until just mixed
- 1 1/2 c flour
- 1 1/4 c mashed strawberries (or peaches, blueberries, or
- combo)
- 3/4 c sugar
- 2/3 c oil
- 2 eggs
- 2 t cinnamon
- 1/2 t salt
- 1/2 t baking powder
Citrus Mango Smoothie

- 3 mangoes, sliced
- 3/4 c OJ
- 1/4 c lime juice
- 1/4 c lemon juice
Veggie Frittata

1) Place vegetables in a 9x13 pan
- 3 red peppers
- 4 cloves garlic
- 2 zucchinis, cut in 3 inch strips
- 1 onion, cut in 1/2 inch slices
- 1 T oil
- 1/4 c parsley, chopped
- 1 3/4 c egg substitute
- 1/4 t cayenne pepper
Paella

1) Brown chorizo and chicken
- 1/2 lb chorizo
- 3/4 lb chicken, cubed
- 1 onion, chopped
- 4 garlic cloves, minced
- 1/2 t red pepper flakes
- 1 bay leaf
- 4 thyme sprigs
- 1 lb shrimp, peeled and deveined
- black pepper
- 2 1/2 c chicken stock
- 1 t turmeric
- 1 t saffron
- 2 c couscous
- 1 c peas
- 1 lemon, zested
- 1 roasted red pepper chopped
