Chicken Satay

1) Combine yogurt, ginger, garlic, and curry powder
- Marinade:
- 1 c plain yogurt
- 1 t ginger root, freshly grated
- 1 t garlic, minced
- 1 T curry powder
- 1 1/2 pounds chicken tenders
- 20 wooden skewers, soaked in water for 30 min.
- Peanut Sauce:
- 1 c smooth peanut butter
- 1/4 c soy sauce
- 2 t red chili paste
- 2 T brown sugar
- 2 limes, juiced
- 1/4 c chopped peanuts for garnish
Spinach Strawberry Salad

Combine all dressing ingredients and toss with salad
- Dressing:
- 1/3 c sugar
- 2 T sesame seeds
- 1 T poppy seeds
- 1 1/2 t onion, minced
- 1/4 t paprika
- 1/2 c oil
- 1/4 c vinegar
- Salad;
- 10 oz spinach
- 1 pt strawberries, sliced

- 1 garlic clove, minced
- red onion, mince
- 8 oz ground beef
- 1/2 t cumin
- 1/2 t ground fennel
- 2 T parmesean cheese
- 2 T tomato paste
- 1/2 c bulgur
Biscuits

Mix all ingredients. Drop onto ungreased cookie sheet
- 2 c flour
- 1 T baking powder
- 1/2 t salt
- 1/4 c oil
- 2 c milk
Mint Patties

1) Beat together butter, sugar, and egg
- 1/2 c butter
- 1 c sugar
- 1 egg
- 1 3/4 c flour
- 1 t baking soda
- 1 T peppermint extract
- 6 oz semi-sweet chocolate chips

Greek Shrimp Pasta Salad

Made for JR's 33rd birthday party and Krista's MPH grad party
- 1 1/2 pounds of orzo
- 1 bunch green onions, chopped
- 3/4 pound feta cheese, crumbled
- 3/4 c fresh dill, chopped
- 1/2 c lemon juice
- 6 T oil
- 3 lbs cooked shrimp, peeled, deveined
- 1 1/2 cucumbers, quartered lengthwise, and cut into 1/4 inch thick pieces
- 2 baskets of cherry tomatoes, halved
New England Clam Chowder

1) Bring clams and 4 c water to a boil and cook until clams open
- 4 lbs clams, rinsed well
- 1 T butter
- 8 ounces bacon, cut in small pieces
- 2 celery stalks, chopped
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 lbs potatoes, cut in 1/2 inch pieces
- 2 sprigs fresh thyme
- 1 bay leaf
- 2 T cornstarch
- 1 c heavy cream
Carrot Ginger Soup

1) In a large stock pot, saute the onion, garlic, ginger, and lemon zest along with the spices
- 2 T oil
- 1 T butter
- 2 garlic cloves, minced
- 1 onion, chopped
- 3 T ginger root, grated
- zest of 1 lemon
- 1 T coriander
- 1 t cumin
- 1 t cinnamon
- 1 lb carrots, chopped
- 2 c stock
- 1/4 c oj
- 1/4 plain yogurt
Roasted Fall Vegetables

1) Place carrots, onion, and squash on a baking sheet and drizzle with oil
- 1/2 lb carrots, halved lengthwise
- 1 red onion, cut into 1" wedges
- 1 acorn squash, seeded, halved, and cut into 1/2" slices
- 1/2 c dried lentils
- 1 shallot
- 4 t apple cider vinegar
- 1 t Dijon mustard
- 1 stalk celery, sliced
Spaghetti Squash

1) Halve and seed squash. Drizzle with oil and bake at 425 degrees for 40 min
- 1 spaghetti squash
- 3 T lemon juice
- 1/4 c shopped parsley
- 1 T grated Parmesan
