Soup Joumou

Berry Muffins

- 1 1/2 c whole wheat flour
- 1 c oats
- 1 T baking powder
- 1/2 t salt
- 1 t ground cinnamon

- 1/4 c oil
- 1/4 c honey

Ethiopian Injera

Ethiopian Injera is an easy way to make a flatbread that is perfect to sop up any scrumptious sauce
- 3 cups self-rising flour
- 1/2 cup whole wheat flour
- 1/2 cup cornmeal
- 1 tablespoon active yeast
- 3 1/2 cups warm water
Gumbo

1) Dice eggplant and sprinkle with 2 t salt
- 1 small eggplant
- 1 large onion, chopped
- 1 red pepper, diced
- 1 clove garlic, crushed
- 2 t paprika
- 1/2 t chili powder
- 4 oz fresh okra
- 3/4 c corn
- 2 c chicken stock
- 8 oz can tomatoes
- 2 T white rice
- 8 oz peeled, cooked shrimp
Apple Crisp

1) Combine apples, flour, sugar, cinnamon, and 1 T water and spread in a greased casserole dish
- 3 c apples, sliced
- 1 T flour
- 1/4 c sugar
- 1 t cinnamon
- 1/2 c oats
- 2 T margarine
- 1/3 c brown sugar
- 1/4 c peanut butter
Fruit and Vegetable Muffins

- 1 c whole wheat flour
- 1 c oats
- 3/4 c brown sugar
- 1 T cinnamon
- 2 t baking soda
- 1 t baking powder
- 1/2 t salt
- 2 large apples, grated
- 1 1/2 c shredded carrots
- 1 c nuts
- 1/2 c raisins
- 2 eggs
- 1/2 c milk
- 1/4 c oil
Banana French Toast

1) Place 4 slices of bread in a single layer in a greased 9 in
- 8 slices Raisin Bread
- 2 bananas, sliced
- 1 c milk
- 4 oz cream cheese
- 3 eggs
- 1/3 c sugar
- 3 T flour
- 2 t vanilla
- powdered sugar
Yogurt Pops

Pour into pop molds an freeze at least 4 hours
- 1 c plain greek yogurt
- 1/2 c honey
- 1/2 c chopped cherries
