Stuffed Squash

  • 2 small squash
  • 1 garlic clove, minced
  • red onion, mince
  • 8 oz ground beef
  • 1/2 t cumin
  • 1/2 t ground fennel
  • 2 T parmesean cheese
  • 2 T tomato paste
  • 1/2 c bulgur



Step 1

-saute onion and garlic, add ground beef, cumin, fennel, and parm and brown
-stir in tomato paste and 1/4 c water
-Cut squash in half lengthwise and scoop out seeds
-boil 1 cup water. add bulgur and bring back to boil. cover and reduce heat to low and simmer 10 min
-add bulgur to beef
-fill the squash with the beef mixture
-bake at 450 for 15 min
