- 1 onion
- 1 T ginger root, grated
- 2 cloves garlic, minced
- 2 t curry powder
- 1 can chick peas, drained
- 16 oz can whole tomatoes, undrained
- 2/3 c water
- 20 oz frozen okra
- black pepper
1) Saute onion, ginger, and garlic. Add curry powder.
2) Add chick peas, tomatoes, and water. Cut tomatoes to release juice.
3) Boil then reduce to a simmer uncovered for 3 min. Add okra and pepper and simmer another 10 min.
