Upside-Down Turtle Muffins

1 Heat oven to 400°F. Spray bottoms, sides and tops of 12 regular-size muffin cups with cooking spray

- 1 Flatout® Light Flatbread
- 1 Tbs reduced fat peanut butter
- 1 Tbs sugar-free jam
- 2 strawberries, hulled and sliced
- 1/4 banana, cut in half lengthwise
- 2 Tbs low fat granola
Curried Chicken and Rice Soup

Combine the chicken, carrots, bay leaf and a pinch of salt in a medium saucepan
- 1 bone-in chicken breast (about 1 1/2 pounds), halved
- 2 medium carrots, sliced diagonally into 2-inch pieces
- 1 bay leaf
- Kosher salt
- 6 cups low-sodium chicken broth
- 2 tablespoons unsalted butter
- 1 large onion, very thinly sliced
- 1 teaspoon sugar
- 1 1/2 teaspoons Madras curry powder
- 1/3 cup jasmine rice
- 3 tablespoons finely chopped fresh mint
- 3 tablespoons chopped fresh dill
- 1 lemon, cut into wedges
Pina Colada Fruit Salad

In a serving bowl, combine the first six ingredients
- 1-1/2 cups green grapes
- 1-1/2 cups seedless red grapes
- 1-1/2 cups fresh blueberries
- 1-1/2 cups halved fresh strawberries
- 1 can (8 ounces) pineapple chunks, drained
- 1/2 cup fresh raspberries
- 1 can (10 ounces) frozen non-alcoholic pina colada mix, thawed
- 1/2 cup sugar
- 1/2 cup pineapple-orange juice
- 1/8 teaspoon almond extract
- 1/8 teaspoon coconut extract
Deep Fried Captain And Coke

Fried Coke: In a sauce pan bring the coke and butter to a vigorous boil
- Fried Coke:
- 1 cup coke
- 4 oz unsalted butter
- 1 cup of AP flour
- 4 large eggs
- 1 tsp vanilla
- 4 tbsp cinnamon sugar (2tbsp sugar mixed with 2tbsp cinnamon)
- Strawberry Syrup:
- 16 oz Strawberries (cut into slices)
- 2 tbsp Orange Juice
- 2 tbsp Sugar
- 1/4 cup water
- Captain Morgan Whipped Cream:
- 2 cups heavy whipping cream
- 2 tbsp simple syrup (equal parts sugar and water heated to create a sugar solution)
- 1 shot of Captain Morgan (or other spiced rum)
Candied Yam Souffle

Preheat oven to 325 degrees F
- 1 stick butter
- 1 cup light brown sugar
- 1/2 cup chopped pecans
- 2 large (40-ounce) cans large yams or sweet potatoes, drained
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 (12-ounce) jar marshmallow topping
Eggnog Pancakes with Butter Rum Syrup

For the pancakes: In a medium mixing bowl, combine flour, Splenda, baking powder, salt, cinnamon, and nutmeg
- FOR THE SYRUP:
- 1 cup All-purpose Flour
- 2 Tablespoons Splenda
- 1 Tablespoon Baking Powder
- 1/2 teaspoons Salt
- 1/2 teaspoons Ground Cinnamon
- 1/2 teaspoons Ground Nutmeg
- 2 teaspoons Meringue Powder
- 2 Tablespoons Water
- 1 cup Eggnog
- 1 Egg White
- 1/4 teaspoons Rum Extract
- 1/2 teaspoons Vanilla Extract
- 2 Tablespoons No-sugar-added Applesauce
- 1 Tablespoon Water
- 2 Tablespoons Margarine
- 2 Tablespoons Splenda Brown Sugar
- 3/4 cups Light Corn Syrup
- 3/4 teaspoons Rum Extract
Nutella Mousse

Dissolve instant espresso in hot water in a medium sized bowl Add the Nutella and Kahlua, beating until smooth
- 1-1/2 cups whipping cream
- 1/2 cup Nutella spread
- 2 tbsp hot water (not boiling)
- 2 tsp instant espresso
- Dash of Kahlua
- 6 Chocolate-hazelnut pirouette cookies
- Chocolate and chopped hazelnuts for topping
Italian Cheese Bread

Grease an oven safe pan, and sprinkle with Sesame seed
- Filling:
- 2 tablespoons sesame seed
- 4 1/2 to 5 1/4 cups all purpose unbleached or bread flour
- 1/4 cup sugar
- 1 1/2 tsp salt
- 2 small packages pf active dry yeast
- 1 cup of milk
- 1 cup of water
- 1/2 cup of butter or margarine
- 2 eggs
- 4 ounces (1 cup) shredded Mozzarella cheese
- 1/2 teaspoon of Italian Seasoning
- 1/4 teaspoon of garlic powder
Bavarian Vanilla Almonds

1. Preheat oven to 250 degrees F and line a large baking sheet with parchment paper
- 1 egg white
- 1/2 teaspoon vanilla extract (1 teaspoon of Vanilla Extract if you are using regular granulated sugar instead of vanilla sugar
- 1 tablespoon water
- 1 pound almonds or pecans
- 3/4 cup of vanilla sugar (if you do have vanilla sugar, simply substitute regular granulated sugar)
- 1 teaspoon of ground cinnamon
- 1 1/2 teaspoons of Vanilla Fleur de Sel (if you do not have Vanilla Fleur de Sel simply substitute fine grain sea salt)
