Baked Bacon French Toast

Ingredients

  • 1 carton of Egg Beaters, or 7 whole eggs (beaten)
  • French Bread*
  • 6 slices of bacon
  • 1 Tsp Vanilla
  • 2 TB Cinnamon
  • Maple Syrup
  • Powdered Sugar (optional)

Preparation

Step 1




Preheat your oven to 375 degrees.

Over med-low heat, cook the bacon until crispy. Remove the bacon from the pan and drain over paper towels. When cool, crumble and set aside.

While the bacon cooks, use a bread knife, or electric knife, to cut 5-6 slices of French Bread (in 2″ thick slices). Cube the slices and set aside.

In a large mixing bowl, pour in the Egg Beaters (or beaten eggs) and add the vanilla and cinnamon. Whisk thoroughly till blended well.

Add the bacon crumbles and the cubed bread, gently stirring to coat every piece of bread.

Prepare a baking dish with cooking spray (or oil) and pour the egg/bread mixture into the dish.

Place in your preheated oven and bake, uncovered, for 15-20 minutes, or until the top is browned and firm to the touch.

Remove from the oven and cut the Baked French Toast Casserole into squares.

Serve with hot with maple syrup and powdered sugar (if desired)

Notes:

Time Saver #1: This casserole can be prepped ahead of time and stored (covered tightly with plastic wrap) in the refrigerator. When it’s time for dinner, uncover it and bake it in your preheated oven.

Time Saver #2: No plans for the leftover French Bread? Go ahead and slice/cube the rest of the loaf. Place the pieces in a gallon sized freezer bag and seal (removing as much air as possible). Store it in your freezer and you’ll have bread ready to go for another round of this casserole OR for making your own bread crumbs!

Variation: After pouring the egg/bread mixture into your prepared pan, place dollops of cream cheese (around a teaspoon’s worth) around and in the top of the casserole. As it bakes, the cream cheese will meld into the bread and create a richer flavor. YUM!
