Pina Colada Tart

Heat oven to 425°F
- 1 box Pillsbury® refrigerated pie crusts, softened as directed on box
- 1/4 cup sugar
- 1/4 cup cornstarch
- 1 cup canned cream of coconut (not coconut milk)
- 1 cup whole milk
- 2 egg yolks
- 1 tablespoon butter or margarine
- 2 tablespoons dark rum or 1 1/2 teaspoons rum extract
- 1 can (20 oz) sliced pineapple, drained, slices cut in half
- 1/4 cup apricot jam
- 1 tablespoon dark rum or orange juice
- 2 tablespoons coconut, toasted*
Apple Cinnamon Coffee Cake

To Make the Dough: In a small bowl, mix together yeast, warm water and pinch of sugar
- For the Dough:
- 2 1/4 teaspoon (1 package) active dry yeast
- 1/4 cup warm water, about 105 to 155 degrees F.
- big pinch of sugar
- 6 tablespoons granulated sugar
- 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon salt
- 3 large eggs
- 4 1/2 to 5 cups all-purpose flour
- 1 cup warm whole milk, 105 to 115 degrees F.
- For the Filling:
- 3 large apples, peeled and cut into small cubes (I used Fuji apples)
- 2 teaspoons fresh lemon juice
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon cornstarch
- 1/2 teaspoon fresh ground nutmeg
- pinch of salt
- For the Streusel:
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- pinch of salt
- pinch of cardamom
- 3 tablespoons unsalted butter, at room temperature
- 1 egg and sugar for brushing and topping the dough before baking
Pad Thai Chicken Burger

Heat outdoor grill to medium-high or indoor grill to 325 degrees F
- 3/4 cup coconut milk
- 1 tablespoon tamarind
- 3 tablespoons sugar
- 2 tablespoons peanut butter
- 2 teaspoons fish sauce
- 1 tablespoon red curry paste
- 1 1/2 pounds ground chicken
- 1 tablespoon fish sauce
- 3 cloves garlic, chopped
- 2 shallots, diced
- 3 teaspoons tamarind
- 2 tablespoons chopped garlic chives
- 2 teaspoons salt
- 6 sesame seed buns
- Chinese or napa cabbage
- Bean Sprouts
Cauliflower Crust Hawaiian Pizza

1. Shred the cauliflower into small crumbles
- CRUST:
- 1/2 LARGE head cauliflower (or 2+ cups shredded cauliflower)
- 1 large egg
- 1 cup finely shredded mozzarella cheese (or try another kind!)
- 1 teaspoon dried oregano
- 1/2 teaspoon dried minced garlic (or fresh garlic)
- 1/2 teaspoon onion salt
- TOPPINGS:
- 1/2 cup tomato-basil marinara sauce (or pizza sauce)
- 1/2 cup finely shredded mozzarella cheese
- 3 slices Canadian bacon, cut into strips
- 1/2 cup pineapple tidbits
Chai Cupcakes with Cinnamon-Honey Swiss Meringue Buttercream:

Preheat to 350 F. Line with cupcake liners, set aside
- For the cupcakes:
- 1 1/3 cup milk
- 6 chai tea bags
- 4 whole eggs
- 2 egg yolk
- 2 tsp. vanilla extract
- 2 3/4 cup cake flour
- 2 cup sugar
- 4 1/2 tsp. baking powder
- 3/4 tsp. cinnamon
- 1/2 tsp. cardamom
- 1/2 tsp. salt
- 8 oz. (2 sticks) unsalted butter, room temperature
- For the swiss meringue buttercream:
- 2 egg whites
- 1/4 cup sugar
- 1 1/2 sticks of butter (12 tbsn.), room temperature
- 6 tbsn. honey
- 1/4 tsp. cinnamon

- 1 1/4 cups milk
- 1/4 cup light corn syrup
- 2 tbsp butter
- 1 tsp vanilla

Peach Shortbread

Brown your butter: Melt butter in a small/medium saucepan over medium-low heat
- 1 cup (7 ounces or 200 grams) white sugar
- 1 teaspoon (5 grams) baking powder
- 2 3/4 cups plus 2 tablespoons (12 5/8 ounces or 359 grams) cups all-purpose flour (or you can measure 3 cups and remove 2 tablespoons flour)
- 1/4 teaspoon cinnamon
- 1/8 teaspoon freshly grated nutmeg
- 1/4 teaspoon (2 grams) salt
- 1 cup (2 sticks or 8 ounces or 227 grams) cold unsalted butter
- 1 large egg
- 2 peaches, pitted and thinly sliced (between 1/8 and 1/4-inch thick)
Spicy Sausage Pasta

- 1 tablespoon olive oil
- 1 pound smoked sausage
- 1 1/2 cups onion, diced
- 2 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 can (10 ounce) Ro-Tel tomatoes and green chiles, Mild
- 1/2 cup heavy cream
- 8 ounces penne pasta
- 1/2 teaspoon salt and pepper, each
- 1 cup Monterey Jack cheese, shredded
- 1/3 cup scallions, thinly sliced
Mandarin Orange Cake

- 1 box Betty Crocker® SuperMoist® yellow cake mix
- 1/2 cup vegetable oil
- 1/2 cup chopped walnuts, if desired
- 1 can (11 oz) mandarin orange segments, drained (reserve 1/3 cup liquid)
- 4 eggs
- 1 can (20 oz) crushed pineapple, undrained
- 1 box (4-serving size) vanilla instant pudding and pie filling mix
- 1/2 to 1 teaspoon grated orange peel, if desired
