Pineapple Smoothie

Put the milk, pineapple, and ice into the blender and blend until smooth, then add the flaxseed oil
- 1 of cup skim milk
- 4 ounces canned pineapple chunks, with the juice
- 1 tablespoon of flaxseed oil
- 6 ice cubes
Apple Puff Pudding

Preheat the oven to 375°F
- butter for greasing
- 3 medium-sized apples — about 375 g (3/4 lb)
- 225 g (1/2 lb) all-purpose flour
- 1/2 teaspoon sea salt
- 2 cups milk
- 3 eggs
- 1/4 cup cold, diced butter
- 2 tablespoons white sugar
CURRIED WILD RICE & CHICKEN CHOWDER

In a small saucepan bring wild rice and water to a boil
- 1/4 cup wild rice
- 3/4 cup water
- 2 tablespoons olive oil
- 2 teaspoons butter
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 carrots, shredded
- 1 stalk celery, diced
- 1 small zucchini, diced
- 1/4 cup flour
- 4 cups low-sodium chicken broth
- 1 1/2 cups 2% milk (Skim would work…will be less rich, but will taste fine, if you’d rather)
- 3/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 bay leaf
- 1/2 teaspoon dried chives
- 1/2 teaspoon dried thyme
- 1/4 teaspoon sage
- 1/8 teaspoon freshly grated nutmeg
- 3/4 teaspoon yellow curry powder
- 2 cups shredded chicken breast (or vege: use the Morningstar Chicken meal-starters, shredded)
- 2 teaspoon fresh, minced parsley
Filipino Ensaymada

1. In the bowl of an electric mixer, combine water and evaporated milk and stir until well combined
- For the dough:
- 4 cups bread flour
- 2/3 cup warm water
- 3/4 cup evaporated milk
- 2 tsp rapid rise yeast
- 2/3 cup sugar
- 2 tsp salt
- 1/3 cup unsalted butter (softened) plus 1/4 cup (melted)
- 3 large eggs
- For topping:
- 1/2 cup sugar
- 1 cup unsalted butter, creamed
- 1 cup grated or shredded cheddar cheese (I used white and yellow cheddar)
Easy Cheesy Zucchini Bake

If you like zucchini, fresh basil, and cheese, you'll love this Easy Cheesy Zucchini Bake
- 2 medium-sized zucchini, cut in slices or half-moon slices
- 2 medium-sized yellow squash, cut in slices or half-moon slices
- 3 tablespoons fresh basil, chopped (more or even less, depending on how much you like the flavor of basil)
- 2 tablespoons green onion, thinly sliced
- 1/2 teaspoon dried thyme
- 3/4 teaspoon garlic powder
- 1/2 cup + 1/2 cup low-fat white cheese (I used Pizza Cheese, which is a low-fat blend of Mozzarella, Provolone, Romano, and Parmesan)
- 1/2 cup Parmesan, coarsely grated (I would use a little less if you only have the very finely grated Parmesan from a can)
- Salt and fresh ground black pepper to taste

- 6 slices bacon, chopped
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 large head cabbage, cored and sliced
- 1 tablespoon salt, or to taste
- 1 teaspoon ground black pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/8 teaspoon paprika

Preheat the oven to 325 degrees
- 2/3 cup unsalted butter, at room temp.
- 2 cups granulated sugar
- 2 large eggs, room temp
- 2 teaspoons vanilla extract
- 1 1/3 cups Bailey’s Irish Cream
- 2/3 cup water
- 2 tablespoons milk
- 4 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons salt
Pina Colada Fudge

1. Lightly butter an 8 x 8-inch baking pan or a 9-inch diameter pan*
- 1 (12 oz.) package white chocolate chips
- 1 (16 oz.) tub cream cheese or vanilla frosting
- 1/4 tsp. salt
- 1/2 tsp. rum extract
- 1/2 cup dried pineapple, chopped
- 1/4 cup toasted flaked coconut
- 1/3 cup chopped macadamia nuts
- 1/3 cup chopped pecans

- 6 ounces extra-wide egg noodles
- 2 - 2 1/4 pound purchased roasted chicken
- 1 cup frozen peas
- 4 cloves garlic, minced or 2 teaspoons bottled minced garlic
- 1 3/4 cups whole milk or light cream
- 1/2 slice white or wheat bread
- 3/4 cup shredded Parmesan cheese
- Snipped fresh thyme (optional)
