- 1 cup (2 sticks) unsalted butter, room temperature
- 2 1/4 cups sifted powdered sugar (sifted, then measured)
- 1 1/2 teaspoons vanilla extract
- 3/4 teaspoon coconut extract
- 2 1/4 cups all purpose flour
- 1 1/2 tablespoons grated orange peel
- 1/2 teaspoon salt
Cheesy Enchilada Casserole

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain
- 1 pound lean ground beef (90% lean)
- 1 large onion, chopped or season with Onion powder or minced onion
- 2 1/2 cups salsa
- 1 can (15 ounces) black beans or red kidney beans, rinsed and drained
- 1/4 cup reduced-fat Italian salad dressing
- 2 tablespoons reduced-sodium taco seasoning
- 1/4 teaspoon ground cumin
- 6 flour tortillas (8 inches)
- 1 small can of drained corn, or about 1 1/4 cups of frozen corn (optional)
- 3/4 cup reduced-fat sour cream *Note: I used 1/2 cup
- 2 cups (8 ounces) shredded reduced-fat Mexican cheese blend
- 1 cup shredded lettuce
- 1 medium tomato, chopped
- 1/4 cup minced fresh cilantro
Oven Roasted Cauliflower

Heat oven to 450 degrees F
- 1 medium head cauliflower (about 2-1/4 pounds), trimmed and cut into florets
- 3 large cloves garlic, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons grated Parmesan cheese
Ranch House Crock Pot Pork Chops with Parmesan Mashed Potatoes

Hearty ranch seasoned pork chops served over Parmesan garlic mashed potatoes
- 6 pork chops, 1/2 inch thick
- 1 packet dry ranch dressing seasoning
- 1 (10 ounce) can cream of chicken soup
- 4 pounds potatoes, peeled and cubed
- 5 tablespoons real butter
- 1 cup fresh grated Parmesan cheese
- 6 cloves roasted garlic (directions are below)
- 1 to 1 1/2 cups warm skim milk (any milk will do, I used skim)
- 1 tablespoon salt, or to taste
- 1 teaspoon fresh cracked black pepper, or to taste
Bailey’s Caramel Irish Cream Cake

Cake: 1. Preheat oven to 325F
- Cake:
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 3/4 tsp baking soda
- 3/4 tsp salt
- 11 TBSP unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2/3 cup Dutch-processed cocoa powder
- 2 large eggs
- 1 tsp vanilla
- 1 1/3 cups warm water
- Frosting:
- 3 large eggs
- 4 large egg yolks
- 1/2 cup water
- 2 cups sugar
- 3 cups of butter, at room temperature
- 1/2 tsp salt
- 4 TBSP Bailey’s Caramel Irish Cream
- Ganache:
- 10 ounces bittersweet chocolate, finely chopped
- 1 cup heavy whipping cream
- 10 caramel candies, unwrapped
Caesar Pasta Salad

Make ahead- if possible, the night before serving: Place cooked pasta in a bowl
- 1 lb pasta, any shape (I like Radiatore) cooked al dente
- 1 envelope Good Seasons Italian dressing, dry
- 2 cups grape or cherry tomatoes, halve them if you like
- 2 large or 6 hearts of Romaine lettuce, washed, chopped
- 4 cups croutons, home made or store bought
- 2 cups grated Parmesan cheese*
- 1/2 to 3/4 (32 oz) bottle Cardinis Original Caesar Dressing*, refrigerated before using if possible
No Bake Vanilla Cake Batter Chocolate Truffles

In a mixing bowl combine all ingredients, except chocolate chips, and stir to combine
- 1 c vanilla cake mix
- 1/4 c sweetened condensed milk
- 1/2 tsp vanilla extract
- 1 tbsp agave (optional and you can just use all sweetened condensed milk if you don’t have agave on hand)
- 1.5 to 2 c chocolate chips
Apple Struesel Cheesecake Bars

Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray
- 1 pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix
- 1/2 cup firm butter or margarine
- 2 packages (8 oz each) cream cheese, softened
- 1/2 cup sugar
- 2 tablespoons Gold Medal® all-purpose flour
- 1 teaspoon vanilla
- 1 egg
- 1 can (21 oz) apple pie filling
- 1/2 teaspoon ground cinnamon
- 1/4 cup chopped walnuts
