Slow Cooker Chicken and Dumplings

Directions Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover
- 4 skinless, boneless chicken breast halves
- 2 tablespoons butter
- 2 (10.75 ounce) cans condensed cream of chicken soup
- 1 onion, finely diced
- 2 (10 ounce) packages refrigerated biscuit dough, torn into pieces
Apple Crumble Muffins

- Apple Muffins:
- 1/2 cup water
- 3 egg whites
- 1/2 cup unsweetened applesauce
- 1/2 cup canned pumpkin
- 2 tsp white vinegar
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1 1/2 cup sugar substitute OR 1/4 cup baking stevia OR 1 1/2 tsp stevia
- 1 3/4 cup oats (look for gluten free oats if you are gluten intolerant!)
- 1 scoop (1/4 cup) plain or vanilla protein powder
- 1 medium apple (about 3/4 cup chopped), peeled and chopped into fine pieces
- Crumble Topping:
- 1/4 cup oats
- 1 tbs brown sugar
- 1 tsp cinnamon
- 1 tbs butter, melted

- 3/4 cup meatless crumbles, de-thawed according to package directions (or 1/2 cup lean ground beef/ground turkey, fully cooked)
- 1/4 cup taco sauce
- 1/4 cup canned corn
- 1/4 cup salsa
- 1 tbs light ranch (or sour cream)
- 1 low carb wrap (such as La Tortilla brand, or something with 100 calories/high in fiber)
- Optional: 1/4 cup low fat shredded cheese, 1/4 cup black beans

Directions Heat grill to high
- 1 pound watermelon (about 1 small), peeled and cut into small wedges (3 cups)
- 1/2 large cucumber halved lengthwise and sliced crosswise into half-moons
- 1 jalapeno chile, halved lengthwise and very thinly sliced on the bias (seeded if desired)
- 1/2 cup torn or small basil leaves
- 2 teaspoons nam pla (Asian fish sauce; ethnicfoodsco.com)
- 3/4 teaspoon whole coriander seeds, toasted and ground
- Juice of 1 lime
- 8 boneless skinless pork cutlets (2 1/2 ounces each), pounded about 1/8 inch thick

Preheat oven to 400 degrees and line a cookie sheet or jelly roll pan with saltine crackers in a single layer
- 40 salted saltine crackers
- 1 cup butter
- 1 cup packed brown sugar
- 2 cups milk chocolate chips
Tomato & Onion Salsa

1. Combine all the ingredients and mix through
- 3 large, ripe tomatoes, finely chopped
- 1 large red onion, peeled and finely chopped
- 1/2 cup fresh parsley, finely chopped
- 1/2 red chilli, finely chopped (remove the seeds if you don’t like it hot)
- salt & pepper to taste
- 1 . Combine all the ingredients and mix through.
- 2 .Set aside until you’re ready to use it.
Oven-baked Squash Chips

1. Using either a mandolin or a knife, slice the squash as thin as you can
- 1 yellow squash
- Salt
- Other seasonings of choice (I used an Italian blend on this batch, but I feel like you could make some great new variations on the chips – cheesy squash chips? Chipotle rubbed squash chips? Garlic squash chips?)
