Broccoli/Rice Casserole

Saute onion, add all ingredients
- 1 stick margarine
- 1/4-1/2 cup onion, sauted in margarine
- 1 can cream of mushroom
- 10 oz. broccoli, cooked
- 1 cup rice, cooked
- 1/2 jar of cheese whiz
Watermelon Malibu Surf

Blend watermelon, strawberries, coconut cream and rum just until smooth
- 1 cup seedless watermelon chunks •
- 1 cup trimmed strawberries, cut in half •
- 1/2 cup coconut cream •
- 1 to 2 shots spiced rum •
- Mini watermelon wedges for garnish •
- 1/2 cup sweetened whipped topping
Loaded Pasta Salad!

- Dressing:
- 3 cups dry pasta (I used Smart Choice brand, but any pasta with high fiber/protein would work)
- 1/2 cup garbanzo beans (or white beans)
- 1/2 cup feta cheese (or shredded parmesan would be good!)
- 1/2 cup olives, (I buys pre-sliced)
- 1 cup celery, diced
- 1 cup red pepper, diced
- 1 cup cherry tomatoes, chopped in half
- 1/2 cup red onion, diced
- 1/2 cup green peas, (I used frozen peas, and defrosted them in the microwave for 30 seconds)
- 1 package dry Italian dressing mix (I used Good Seasons brand)
- 1/4 cup white vinegar
- 1/4 cup water
- 1/2 tsp lemon juice
- Salt and pepper to taste
- Optional Variations:
- 1/2 tsp sugar substitute added to the dressing for a sweeter dressing (or 1 package stevia, or to taste)
- Add 1/2 cup chopped chicken (to an individual serving) to turn this pasta salad into a well-rounded meal!
- You may also use 1/2 cup bottled light Italian dressing in place of the homemade version!
Lemon Pound Cake Lightened-Up

- 2 cups all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 (8 oz) block of fat-free cream cheese, softened at room temperature
- 1/2 cup (1 stick) of light butter, softened
- 1/2 cup fat-free plain greek yogurt
- 1 Tbsp fresh lemon zest (about 1 lemon)
- 1 cup sugar
- 4 eggs brought to room temperature
- 1 tsp. vanilla extract
Slow-Cooker Lemon Garlic Chicken

Remove the bag of gizzards and discard (or reserve for stock)
- Seasoning:
- 3 to 4 pound chicken (labeled fryer or roaster)
- 3 garlic cloves, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 2 sprigs thyme, leaves stripped and minced
- Poaching liquid:
- 3 tablespoons fresh lemon juice (about 1 lemon), reserve the rinds
- 2 tablespoons soy sauce
- 1/4 cup chicken broth
- 1 whole lemon, quartered
- 1 head garlic, cloves separated, but left in their individual skins
- 2 chicken bouillon cubes
- 2 sprigs thyme
- 2 sprigs rosemary

Place the chicken, soup, onion, potatoes, carrots, and apple into the slow cooker
- 4 Skinless Boneless Chicken breasts (halved)
- 2 cans (10.75 oz) of condensed Cream of Chicken Soup (reduced fat works great!)
- 1 onion, chopped
- 2 medium potatoes, peeled and cubed (sweet potatoes are yummy too!)
- 1 cup of baby carrots
- 1 red apple, cubed
- 1/2 cup of apple juice
- 2 (10 oz) packages refrigerated biscuit dough torn into pieces
