Mexican Tuna Salad

Add all ingredients together and put in the fridge to chill for at least 30 mins
- 1/2 tomato diced
- 1/2 green bell pepper diced
- 1/2 white onion diced
- 1 can if sweet corn drained
- 2 cans of albacore tuna drained
- 1 tbsp of lime juice
- 1 tbsp of lemon juice
- Salt and pepper to taste
Turkey Soup (leftover Thanksgiving turkey)

In large kettle, saute onion & celery in butter until tender, about 10 min
- 1 lg. onion, chopped
- 3 sticks celery, cut into 1/4" pieces
- 6 Tbsp. butter
- 6 Tbsp. flour
- 1 tsp. salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1/2 tsp each - thyme, savory & parsley flakes
- 1 1/2 cup milk
- 4 cups cubed cooked turkey
- 5 med. carrots, cut into 1/4" pieces
- 1 to 2 cups turkey or chicken broth
- 1 pkg (10 oz) frozen peas

- 1 tsp banana extract (found next to vanilla extract OR you could use vanilla extract if you want to make plain cinnamon french toast)

- 1/4 tsp pumpkin pie spice (or nutmeg)
- 1/4 cup skim milk (or milk substitute of choice)
- 1/2 cup egg beaters
- 1/4 cup low sugar (or sugar free) maple syrup
- 1/4 cup walnuts, roughly chopped

1 Heat panini press to medium
- 1 avocado
- 1 teaspoon fresh lemon juice
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1/3 cup grape tomatoes, quartered
- 2 teaspoons jalapenos, chopped (jarred variety)
- salt and pepper 2 pieces naan bread (or can use tortillas or any other bread)
