- Dressing:
- 1 1/2 TBL Fish Sauce
- 1 lime juiced
- 1 shallot- diced
- 1 cloce of garlic minced
- 2-3 Thai peppers minced
- Salad:
- Lettuce
- Steak or chicken
- Green Onion
- Cilantro
Ham Biscuits

Preheat oven to 325. Mix butter, mustard, onion, worchestshire and poppy seeds
- 1 stick of butter- melted
- 1 tbsp yellow mustard
- 1 tbsp chopped onion (I use more)
- worchestshire to taste
- popy seeds to taste
- 1 pkg 24 count potato party rolls
- 1 pound of honey ham
- 1/2 pound of swiss cheese
Rosemary Roasted Almonds

1. Preheat oven to 325°. 2
- 1 tablespoon finely chopped fresh rosemary
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon chile powder
- 3/4 teaspoon kosher salt
- Dash of ground red pepper
- 1 (10-ounce) bag whole almonds (about 2 cups)
Couscous

Set a 1-quart saucepan over high heat and add the water, red onions, carrots and currants
- 1 1/2 cups water
- 1/2 cup small diced red onion or shallots
- 1/2 cup small diced carrot
- 1/2 cup currants
- 1 (10-ounce) package couscous
- 2 tablespoons extra-virgin olive oil
- 1/4 cup toasted pine nuts
- 3/4 teaspoon salt
- 1/2 teaspoon fresh ground white pepper
- 1 tablespoon chopped fresh mint leaves
Chicken Diablo

Rotel recipe doctored a bit
- 2 tablespoons oil
- 4 boneless skinless chicken breasts (5 oz each)
- Cumin to taste
- Kosher salt to taste
- Pepper to taste
- 1 white onion
- 1 clove of garlic
- 1 pkg sliced fresh mushrooms
- 2 tablespoons Hunt's® Tomato Paste
- 1 can (10 oz each) Ro*Tel® Hot Diced Tomatoes & Green Chilies, undrained
- 1 can (8 oz each) Hunt's® Tomato Sauce
Smashed Potato Gratin

Cut the potatoes into quarters and place in a large saucepan with the garlic cloves
- 3 pounds Yukon gold potatoes
- 3 garlic cloves, peeled
- Kosher salt
- 1 cup milk
- 1 cup sour cream
- 2 cups grated Cheddar
- 3/4 cup panko bread crumbs
- 1/2 cup grated Parmigiano-Reggiano
- Pinch cayenne pepper
- 1 bunch chives
Corn Casserole

Paula Dean's Corn Casserole
- Ingredients
- 1 (15 1/4-ounce) can whole kernel corn, drained
- 1 (14 3/4-ounce) can cream-style corn
- 1 (8-ounce) package corn muffin mix (recommended: Jiffy)
- 1 cup sour cream
- 1/2 cup (1 stick) butter, melted
- 1 to 1 1/2 cups shredded Cheddar
Orecchiette with Peas, Shrimp & Buttermilk- herbed dressing

1. Cook pasta according to package directions, omitting salt and fat
- 8 ounces uncooked orecchiette pasta
- 1 cup shelled green peas (about 1 pound unshelled green peas) or frozen green peas
- 1/2 pound medium shrimp, peeled and deveined
- 1 cup thinly sliced radishes
- 1/3 cup reduced-fat mayonnaise
- 1/4 cup fat-free buttermilk
- 3 tablespoons minced fresh chives
- 1 tablespoon chopped fresh dill
- 1/2 teaspoon salt
- 1/2 teaspoon grated lemon rind
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon ground red pepper
- 2 garlic cloves, minced
Porkchops Smothered w/ Peppers & Onions

Preheat the oven to 400 degrees F
- 4 bone-in pork chops, 1 1/2-inches thick, at room temperature
- Kosher salt and freshly ground black pepper
- 3 tablespoons EVOO
- 4 cloves garlic
- 1 large onion
- 1 to 2 cubanelle peppers
- 1 red bell pepper, seeded
- 1 red chile pepper
- 1 teaspoon fennel seeds
- 2 tablespoons tomato paste
- 1/2 cup dry white or red wine
- 1 1/2 cups chicken stock
Homemade Taco Seasoning

Mix together all ingredients
- 1 tablespoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon crushed red pepper flakes
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 1/2 teaspoons ground cumin
- 1 teaspoon sea salt
- 1 teaspoon black pepper
