Sour Cream Coffeecake Muffins

- 1/2 cup packed dark brown sugar
- 1/4 cup chopped pecans
- 1 1/2 teaspoons ground cinnamon
- 1 cup granulated sugar
- 1/4 cup butter, softened
- 1/2 cup egg substitute
- 1 cup reduced-fat sour cream
- 2 tablespoons water
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour (about 7 3/4 ounces)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Cooking spray
- 6 tablespoons powdered sugar
- 3 teaspoons fresh orange juice
- Dash of salt
Green Bean Salad

1. Combine vinegar, oil, salt, pepper, garlic and oregano in a small bowl
- 1 pound of green beans, trimmed
- 1 pint of cherry tomatoes halved
- 1/4 cup of Kalamata olives (I dice)
- 1 Tbl fresh oregano
- 2 1/2 Tbl red wine vinegar
- 3 Tbl olive oil
- 1/4 tsp salt
- 1/4 tps pepper
- 3 cloves of garlic, minced
- 1/2 pound of shrimp or chicken- thinly sliced

1. Preheat broiler. 2. Bring 6 quarts water and 1 tablespoon salt to a boil
- 3 1/4 teaspoons salt, divided
- 12 ounces strozzapreti or penne pasta
- 4 teaspoons all-purpose flour
- 1 1/2 cups skim milk, divided
- 2 cups finely shredded sharp cheddar cheese, divided
- 1/4 cup sliced green onions
- 1 teaspoon hot sauce
- 1/4 teaspoon pepper
- 2 slices center-cut bacon, cooked and crumbled $

Beef & Sausage Meat Loaf w/ Mozzerella

Preheat oven to 375°F. Combine first 11 ingredients in large bowl
- 2 pounds lean ground beef (15 percent fat)
- 1 pound coarsely grated whole-milk mozzarella cheese
- 1 pound sweet Italian sausages, casings removed, meat crumbled
- 2 cups chopped fresh basil
- 2 cups fresh breadcrumbs made from crustless French bread
- 1 medium onion, chopped
- 1 cup chopped drained oil-packed sun-dried tomatoes
- 5 garlic cloves, minced
- 1 1/2 tablespoons dried oregano
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1 cup tomato sauce, divided
- 3 large eggs, beaten to blend
- 1/2 cup dry red wine

- 1 stick ( 1/2 cup) butter
- 1 egg, lightly beaten
- 1 cup milk
- 1 cup all-purpose flour
- 1 cup sugar
- 2 teaspoons baking powder

- 2 quarts whole strawberries, capped and washed
