In a food processor fitted with a metal blade, combine the chickpeas, lemon juice, tahini paste, and garlic
- 2 cups canned chickpeas, drained and rinsed
- 1 lemon, juiced
- 2 tablespoons tahini paste
- 1 tablespoon garlic
- 1/4 cup olive oil, plus more, for drizzling
- Salt
- Freshly ground black pepper
- 1 cup kalamata olives, pitted
- Fresh pita bread
Bacon Wrapped Dates Stuffed with Manchego Cheese

Preheat the oven to 400 degrees F
- 15 Medjool pitted dates
- 1 pound aged Manchego, cut into 15 blocks
- 5 slices bacon, cut into thirds
- 1/2 cup maple syrup
Fruit Salad w/ Poppy Seed Dressing

- 1 c halved green seedless grapes
- 1 c quartered strawberries
- 1/2 c blueberies
- 2 T sugar

- 1 tsp poppy seeds

- 2 tablespoons fish sauce
- 1 shallot
- 1-4 Thai chili pepper

- 2 1/4tsp2 1/4 tsp Lime Juice

- 1TB1 TB Cilantro – Roughly Chopped

- Salt and Pepper to Taste
- Few Dashes of Cholula Hot Sauce (optional)

Chicken & Feta Tabbouleh

1. Place bulgur in a medium bowl; cover with 1 cup boiling water
- 3/4 cup uncooked bulgur
- 1 cup boiling water
- 2 cups chopped skinless, boneless rotisserie chicken breast
- 1 cup chopped plum tomato
- 1 cup chopped English cucumber
- 3/4 cup chopped fresh parsley
- 1/2 cup (2 ounces) crumbled feta cheese
- 1/3 cup finely chopped green onions
- 1/4 cup chopped fresh mint
- 2 tablespoons fresh lemon juice
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon bottled minced garlic
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon black pepper

- Pecan Halves (I used about 1/2 pound)

Baked Potato Salad

Preheat oven to 350. Bake potatoes for 1 hours
- 5 pounds baking potatoes
- 1 pound sour cream
- 1 stick of butter (melted)
- 1 bottle of ranch dressing
- 1 8 oz package of sharp cheddar cheese
- 2 packages of bacon pieces
- salt and pepper to taste
- scallions to taste

1. Combine 2 teaspoons olive oil, rosemary, and chicken in a large zip-top plastic bag
- 2 tablespoons extra-virgin olive oil, divided
- 1 teaspoon chopped fresh rosemary
- 4 (4-ounce) chicken cutlets
- 1/4 cup chopped drained oil-packed sun-dried tomato
- 1/8 teaspoon crushed red pepper
- 8 garlic cloves, thinly sliced
