Tex Mex Hashbrown Caserole

1. Preheat oven to 450°. 2
- 4 teaspoons canola oil, divided
- 4 ounces Mexican chorizo
- 3 garlic cloves, minced
- 1 cup enchilada sauce
- 1/3 cup grated white onion
- 1/4 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 3 pounds Yukon gold or baking potatoes, peeled and shredded
- 1 large egg, lightly beaten
- 1 cup (4 ounces) shredded sharp cheddar cheese
- 1/2 cup chopped avocado
- 1 1/2 teaspoons fresh lemon juice
- 1/4 cup fresh cilantro leaves
- 1/4 cup chopped white onion
- 6 radishes, thinly sliced
Sweet Skillet Cornbread

Preheat oven to 400 degrees
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- {heaping} 1/3 cup white sugar
- 1/3 cup packed brown sugar
- 1 teaspoon salt
- 3 1/2 teaspoons baking powder
- 1 egg
- 1 cup milk
- 6 tablespoons of melted butter
Roasted Smoky Cauliflower w/ Limey Yogurt

Preheat the oven to 400 degrees F
- 2 medium cauliflower heads (use different colors if you can find them), stripped of leaves and main stalk chopped off
- 1/3 cup extra-virgin olive oil, plus a splash
- 1 teaspoon ground coriander
- 1 teaspoon dried mango powder (amchoor, found at Indian stores, optional)
- 1/2 teaspoon ground cumin
- Kosher salt and freshly ground black pepper
- 1 cup Greek yogurt
- 1 lime, zested, plus a squeeze of juice
Baked Tilapia with Tomato and Basil

Preheat the oven to 400 degrees F
- Nonstick cooking spray
- 2 (8-ounce) tilapia fillets
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 tablespoon minced fresh basil leaves
- 1 teaspoon minced fresh oregano leaves
- 1 teaspoon onion powder
- 1 teaspoon minced garlic
- 3 tablespoons olive oil
- 1 large tomato, thinly sliced
- 1 teaspoon fresh lemon juice
Roasted Cauliflower w/ dates & pine nuts

Preheat the oven to 425 degrees F
- 1 large head cauliflower, cut into florets (about 8 cups)
- Kosher salt and freshly cracked black pepper, to taste
- 4 tablespoons unsalted butter
- 1/3 cup pine nuts
- 1 clove garlic, minced
- 1/2 cup pitted Medjool dates, coarsely chopped
Broccoli salad

- 3 bunches broccoli
- Red onion to taste
- Sunflower seeds approx 1/2 cup
- Bacon to taste
- 8 oz pkg sharp cheddar cheese
- Salt and pepper to taste
- 1 cup Mayo
- 1 Tablespoon Vinegar
- Approx 1- 2 heaping tablespoons sugar
Chocolate Chess Pie

Preheat oven to 350 degrees
- 1 1/2 c sugar
- 2 TB flour
- 2 TB cocoa
- Pinch of Salt
- 2 eggs
- 1 c evaporated milk
- 2 TB melted butter or marg.
- 1/2 tsp vanilla

- 1 Cup granulated white sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 egg
- 2 teaspoons baking powder
- 3 cups all purpose flour
