Peanut Butter- Caramel Pound Cake

Place an oven rack in the center of the oven
- Vegetable oil cooking spray
- 1 (9.5-ounce) bag soft caramel candies, unwrapped (recommended: Kraft Classic Caramels)
- 1/2 cup heavy cream
- 1 cup flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
- 1 1/4 cups sugar
- 3 eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1/2 cup creamy peanut butter
Rigatoni w/ Spicy Sun-dried Tomato Sauce

Cook pasta in large pot of rapidly boiling salted water until just tender but still firm to bite, stirring occasion...
- Optional:
- 1 pound rigatoni
- 1 8.5-ounce jar sun-dried tomatoes in olive oil with herbs, drained, 1 tablespoon oil reserved
- 1 tablespoon minced garlic
- 1 29-ounce can ready-cut tomatoes
- 1/2 cup Kalamata olives, pitted, chopped
- 1 cup fresh chopped basil
- 1 cup crumbled feta cheese(about 4 ounces)*
- 3/4 cup freshly grated Parmesan cheese (about 2 ounces)*
- Spicy italian sausage
- Red pepper flakes
- Mozzarella
- I use extra.
Mushroom & Gruyere Quiche

Whole Foods recipe- 320 cals per serving
- 1/4 pound cremini mushrooms, cut into quarters or eighths, depending on size
- 1/4 pound portobello mushroom caps, diced
- 1/4 pound shiitake mushrooms, stems removed and discarded, cut into quarters
- 1/2 medium yellow onion, thinly sliced
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 frozen 9-inch pie crust, thawed
- 1/2 cup heavy cream
- 2 eggs
- 1 tablespoon chopped fresh thyme
- 4 ounces gruyère cheese, shredded (about 1 1/2 cups)
- 2 teaspoons chopped fresh thyme
Festive Bacon & Cheese Dip

Place cream cheese, colby- jack, half &half, mustard, onion, worchestershire, salt & hot pepper sauce in a crockpot
- 16 oz soft cream cheese, cubed
- 4 c shredded colby- jack cheese
- 1 c half & half
- 2 T pepared mustard
- 1 T chopped onion
- 2 tsp worchestershire
- 1/2 tsp salt
- 1/4 tsp hot pepper sauce
- 1 pound of bacon, cooked & crumbled
Guinness BBQ Sauce

1. Melt the butter in a saucepan
- 2 tbsp butter
- 2 onions, minced
- 5 garlic cloves, minced
- 1/2 cup molasses
- 1 cup Guinness beer
- 1/2 cup white vinegar
- 1 1/2 cup brown sugar
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cayenne
- 1 cup (8oz can)tomato paste

- 1/3 cup fresh lime juice
- 1 teaspoon sugar
- 3/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 3 tablespoons olive oil
- 1/2 cup thinly vertically sliced red onion
- 1/2 cup coarsely chopped fresh cilantro
- 1 (16-ounce) package cabbage-and-carrot coleslaw

Crockpot Chicken Tortilla Soup

Place chicken, tomatoes, enchilada sauce, onion, green chiles & garlic into a slow cooker
- 1 pound frozen chicken (shred near end of cooking time)
- 1 (15 oz) can whole peeled tomatoes, mashed
- 1 (10 oz) can enchilada sauce
- 1 medium onion, chopped
- 1 (4 oz) can chopped green chile peppers
- 2 cloves garlic, minced
- 3 (14.5 oz) cans chicken broth
- 1 tsp cumin
- 1 tsp salt
- 1/4 tsp black pepper
- 1 (10 oz) package frozen corn
- 1 can black beans, rinsed
Basic Granola

1. Heat the oven to 300°F and arrange a rack in the middle
- 3 cups rolled oats (not instant)
- 3 tablespoons packed light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 1/3 cup honey
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup small-dice dried fruit
- 1/2 cup coarsely chopped raw or toasted nuts or seeds
Roasted Butternut Squash Salad

Preheat the oven to 400 degrees F
- 1 (1 1/2-pound) butternut squash, peeled and 3/4-inch) diced
- Good olive oil
- 1 tablespoon pure maple syrup
- Kosher salt and freshly ground black pepper
- 3 tablespoons dried cranberries
- 3/4 cup apple cider or apple juice
- 2 tablespoons cider vinegar
- 2 tablespoons minced shallots
- 2 teaspoons Dijon mustard
- 4 ounces baby arugula, washed and spun dry
- 1/2 cup walnuts halves, toasted
- 3/4 cup freshly grated Parmesan
