French Onion Soup

Ingredients

  • 8-10 yellow onions, sliced in half and then sliced length wise (to make half rings)
  • 1/4 c. butter
  • 2 T. olive oil
  • 1/4 c. sherry (or other red cooking wine)
  • 4-5 cloves of garlic, fine minced
  • salt and pepper to taste
  • 4 32oz boxes of low sodium beef broth
  • 3 bay leaves
  • 3 T. thyme
  • 2 T. sage
  • 1 T. garlic powder
  • 12 slices French bread, toasted (omit for Paleo)
  • 12 slices provolone cheese (omit for Paleo)

Preparation

Step 1

In a large pot place the broth, bay leaves, thyme, sage and garlic powder. Bring to a boil over medium-high heat. In the meantime, saute onions and minced garlic in butter and olive oil. Once they begin to brown, add sherry and reduce liquid down. Add onion mixture to the broth and cook on low heat for 3-4 hours. Place in soup bowls or ramekins. Top with a piece of bread and a slice of cheese. Place under low broiler just until cheese browns.
