In a large, heavy stockpot or Dutch oven, heat the oil over medium heat
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 3 ounces thinly sliced pancetta, coarsely chopped
- 2 cloves garlic, crushed
- 1 pound Swiss chard, stems trimmed, leaves coarsely chopped
- 1 russet potato, peeled and cubed
- Kosher salt and freshly ground black pepper
- 1 (14 1/2-ounce) can diced tomatoes in juice
- 2 fresh rosemary sprigs
- 1 (15-ounce) can cannellini beans, drained and rinsed, divided
- 2 (14-ounce) cans low-sodium beef broth, divided

- 1/4 cup chopped fresh flat-leaf parsley

Buffalo Chicken Mac n' Cheese

In a large sauce pan shred all of your cheese and cube your cream cheese, add in dressing and milk
- 1 box of your favorite pasta, cooked according to the box directions
- 2 cups shredded chicken
- 8 oz pepper jack cheese
- 8 oz Vermont sharp cheddar
- 8 oz Velveeta cheese (or American)
- 8 oz cream cheese
- 3/4 cup chunky blue cheese dressing or dip
- 1 cup milk ( I use 2%)
- 1/4 cup hot sauce
- 1/4 cup bread crumbs
- 8 slices fried bacon, crumbled

- 1/2 cup potato starch (not potato flour)

- 4 boneless, skinless chicken breasts
- 1/2 cup Italian bread crumbs
- 1/4 cup parmesan cheese
- 1/2 tsp Italian Seasoning
- 1/4 tsp black pepper
- 1/4 tsp kosher salt
- 1 T olive oil
- 1 egg
- sliced mozzarella cheese (can also use shredded)
- Spaghetti sauce (26 oz or more)
