Pumpkin Spice Bundt Cake

Preheat oven to 350 degrees
- 18.25 oz package spice cake mix
- 1 cup canned pumpkin
- 5 oz can evaporated milk
- 1/3 cup canola oil
- 3 large eggs, lightly beaten
- 4 oz cream cheese, softened (I used fat-free)
- 2 cups powdered sugar
- 2 tablespoons pumpkin spice coffee creamer OR milk, divided
- 1 teaspoon vanilla extract

1.Preheat oven to 375 degrees F (190 degrees C)
- 1/2 cup butter, softened
- 1/2 cup of shortening
- 1 1/2 cups sugar
- 2 eggs
- 2 3/4 cups flour
- 1 tsp baking soda
- 2 tsps cream of tartar
- 1/4 tsp salt
- 2 Tbsp sugar
- 2 tsps ground cinnamon
Chicken Quesadillas

Heat 1 tablespoon of the olive oil in a skillet over high heat
- 2 tablespoons olive oil
- 2 pounds skinless chicken breasts
- Salt and pepper
- 2 tablespoons taco or Cajun seasoning mix
- 1 large onion, cut in half and then into slices
- 1 green bell pepper, seeded and sliced into strips
- 1 red bell pepper, seeded and sliced into strips
- 1 yellow bell pepper
- 12 tablespoons butter, for frying
- 12 large flour tortillas
- 2 1/2 cups grated cheese ( Monterey Jack is the best)
- Pico de Gallo, for serving, recipe follows
Baked Apple Pie Egg Rolls

1.Preheat oven to 375 degrees F 2
- 2 apples 1 granny smith and 1 gala (about 2 heaping cups worth)
- 1 large lemon juiced
- 1/3 cup sugar
- 4 Tbsp. flour
- 2 tsp. ground cinnamon
- 1/4 tsp. all spice
- 1/8 tsp. salt
- 16 egg roll wrappers
- 1 egg lightly beaten
- SWEETENED WHIPPED CREAM DIP . .
- 3/4 cup heavy whipping cream
- 1/4 cup sugar
- 2 tsp. vanilla
- cinnamon to sprinkle on top

Healthy Coffee Banana Smoothie Recipe

Whip up an easy banana and yogurt smoothie, with a kick of coffee
- 1 cup chilled Seattle's Best brewed coffee
- 1 1/2 bananas, cut into chunks
- 1 cup nonfat plain Greek yogurt
- 1 tbsp ground flax seed
- 2 tsp honey or agave nectar
- 1/2 tsp ground cinnamon
- 1/4 tsp grated nutmeg

Blanch the broccoli by throwing florets into boiling water for 30 seconds, then draining and pouring into ice water

- 4 cups old-fashioned oats
- 1/2 cup packed light brown sugar
- 1/2 teaspoon salt
