Heather's Bacon Shiitake Chicken

- 4 Boneless, Skinless Chicken Breasts
- 5 oz. Shiitake Mushrooms, chopped
- 1 lb. bacon, cut into small pieces
- Three 14 oz. cans Chicken Broth
- 3 Tbsp Olive Oil

Oven Roasted Potatoes and Vegetables

Preheat oven to 450 degrees Fahrenheit
- 2 1/2 cups potato wedges
- 1 medium red bell pepper, cut into 1" pieces
- 1 cup corn kernels
- 1 small zucchini, cut into 1/2" pieces
- 4 oz. mushrooms, sliced (about 1 cup)
- 2 tsp. olive oil
- 1/2 tsp. dried Italian Seasoning
- 1/4 tsp. garlic salt

- 5 cups all-purpose flour
- 2 cups sugar
- 1 cup oleo
- 1 cup sweet milk
- 2 eggs
- 1 1/2 tsp vanilla
- 1 1/2 tsp baking soda
- 2 tsp baking powder
- 2 tsp cream of tartar
Beef Fillets with Portobello Sauce

This recipe combines the savory flavor of the beef tenderloin with the tangy flavor of the added sauces
- Four 4 oz. Beef Tenderloin Steaks
- 1 cup dry red wine OR Beef Broth
- 2 tsp all-purpose flour
- 1 cup Beef Broth
- 2 tsp A1 Steak Sauce
- 2 tsp Worcestershire Sauce
- 2 tsp ketchup
- 1 tsp ground mustard
- 8 oz. fresh Baby Portobello Mushrooms, sliced
- 1/2 tsp pepper
- 1/4 tsp salt
- 2 Tbsp dried chives
Cherry Cheese Pie

- 21 oz. can Cherry OR Strawberry Pie Filling, chilled
- 8 oz. package cream cheese, softened
- 14 oz. can Eagle Brand Low Fat Sweetened Condensed Milk
- 1/3 cup lemon juice
- 1 tsp vanilla extract
- 9” Graham Cracker Crust
Eggnog Muffins

*For the Muffins:* Grease 12-15 muffin cups or line with paper baking cups; Set aside
- Muffins:
- 2 1/4 cups all-purpose flour
- 1 cup sugar
- 2 tsp baking powder
- 1/2 tsp ground nutmeg
- 2 eggs, lightly beaten
- 1 cup dairy eggnog
- 1/2 cup butter, melted and cooled
- 1 1/2 tsp vanilla
- 1/2 tsp rum extract (optional)
- Nutmeg Streusel Topping:
- 1/3 cup all-purpose flour
- 1/3 cup sugar
- 1/2 tsp ground nutmeg
- 2 Tbsp butter

- 1 package crescent rolls
- 8 oz. cream cheese, softened
- 8 oz. miracle whip
- 1 packet Hidden Valley Ranch Dip Mix
- 1 - 2 stalks broccoli, chopped
- 1/2 - 1 small cauliflower, chopped
- 12 - 20 baby carrots, chopped

- Pecan Shortbread Crust:

- 2/3 cup pecans, finely chopped
- 1 cup butter, softened
- 2/3 cup sugar
- 1 tsp vanilla
- Filling:

- 20 oz. can Pineapple Chunks, drained
