Cherry Pineapple Crumble Bars

I created this recipe for our family reunion and it was a hit!
Ingredients
- Pecan Shortbread Crust:
- 2 cups flour
- 2/3 cup pecans, finely chopped
- 1 cup butter, softened
- 2/3 cup sugar
- 1 tsp vanilla
- Filling:
- Two 21 oz. cans Cherry Pie Filling
- 20 oz. can Pineapple Chunks, drained
- Pecan Topping:
- 3/4 cup all-purpose flour
- 1/3 cup brown sugar
- 1/4 tsp ground cinnamon
- 1/4 tsp salt
- 6 Tbsp chilled butter, cut into small pieces
- 1/4 cup pecans, chopped

Step 1
*For the Pecan Shortbread Crust:*
To a large bowl, add all the ingredients and mix together using an electric mixer until the butter has been completely mixed into the crust mixture. Press the Crust evenly into the bottom of a 9” x 13” glass baking dish.
*For the Filling:*
Cut the pineapple chunks in half. Pour the cherry pie filling and the pineapple chunks into a medium bowl and mix together to combine. Using a spatula, spread the Filling evenly over the Crust.
*For the Pecan Topping:*
In a medium bowl, mix together the flour, brown sugar, cinnamon, salt, and pecan pieces. Using a pastry blender, blend the butter pieces into the flour mixture until small lumps form (similar to a topping when making a crisp). Sprinkle the Topping over the top of the Filling layer, making sure to cover all of the cherry and pineapple filling. Bake the crumble at 350 degrees Fahrenheit for 1 hour and 15 minutes. Allow it to cool for 1 hour before cutting into bars.
