Blueberry-Banana Bread

This is a delicious bread that makes an excellent addition to breakfast or a late afternoon snack
- 2 cups fresh OR frozen blueberries
- 4 large eggs
- 4 large bananas, mashed (2 cups)
- 2/3 cup butter
- 1 1/2 cups sugar
- 3 1/2 cups + 4 Tbsp flour
- 4 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1 tsp vanilla
- 1 Tbsp lemon juice
Chicken Enchiladas

- 1 1/2 - 2 lbs. Boneless, Skinless Chicken Breasts
- Two 10 oz. cans Old El Paso Mild Enchilada Sauce
- 8 oz. Finely Shredded Mozzarella Cheese
- Nature's Seasons
- Burrito Size Flour Tortillas
- Olive Oil
- Vegetable Shortening
Pumpkin Spice Sugar Cookies

In a medium bowl, combine the flour and baking soda; Set aside
- 3/4 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 3/4 cups all-purpose flour
- 1 tsp baking soda
- 2 tsp pumpkin pie spice
- 1 tsp salt (optional)
Hash Brown Casserole

This is a mountain of potatoes and cheese that completes any warm breakfast meal!
- 30 oz. Ore-Ida Hash Browns
- 2 cups shredded Cheddar cheese
- 1 cup 4-Cheese Mexican cheese
- 2 - 10 1/2 oz. cans Cream of Chicken soup
- 3/4 of a 16 oz. container sour cream
- 1 - 1 1/2 cups onion, chopped (optional)
- Salt to taste
- Pepper to taste

- 2 tsp ground cinnamon
- 1/2 cup butter OR margarine, melted
- 1/2 cup brown sugar, packed
Apple Banana Bread

Spray the sides and bottom of a 9” x 5” x 3” loaf pan with a non-stick cooking spray and flour; Set aside
- 2 Red Delicious apples, peeled, cored, and cut into 1/2” diced pieces
- 1 cup ripe bananas, mashed
- 1 stick + 2 Tbsp margarine, softened at room temperature
- 1/4 cup orange juice
- 2 eggs
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup sugar
- 2 Tbsp brown sugar
- 1 tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1 1/2 tsp vanilla extract
Extra Crispy Fried Chicken

This is a recipe that I created in order to achieve a crispier fried chicken
- 2 - 2 1/2 lbs. Boneless, Skinless Chicken Breasts
- 2 - 3 eggs, beaten
- 2 Tbsp milk
- 1/2 cup Yellow Corn Meal
- 1/2 cup all-purpose flour
- 1 Tbsp paprika
- 1 tsp. garlic salt
- 2 Tbsp butter
