Crockpot Chicken Salsa

Add all ingredients, except sour cream, freeze flat
- 4 chicken breasts
- 1 cup of salsa
- 1 pkg. taco seasoning
- 1 can of cream of mushroom
- 1/2 cup reduced fat sour cream (separate, added the day from cooking)
Crockpot Shredded Pork

Slice onions and layer on the bottom of crockpot
- Dry rub:
- 5 lb. pork roast
- 1 large onion, sliced
- 3 tab. chili powder
- 1 tsp. coriander
- 2 tsp. cumin
- 2 tsp. onion powder
- 1 tab. oregano
- 1/2 tsp. chipotle powder
- 2 tsp. salt
Marinate Sauce

Whisk together. Marinate meat or chicken, 1-2 hours or overnight
- 1 tab. soy sauce
- 1/2 lemon
- 3 tab. water
- 2 tab. brown sugar
- 2 cloves of garlic, chopped
- 1 tab. vinegar
California tuna parmesan

Thaw tuna, if frozen. Preheat oven to 450 degrees
- 4 4oz. fresh or frozen tuna steaks
- 2 lemons
- 1/3 cup olive oil
- 1/2 teas. freshly ground black pepper
- 1/4 teas. salt
- 12 oz. asparagus
- 1 -5oz. package mixed baby greens
- 1/3 cup finely shaved Parmesan cheese

- 1/2 cup brown sugar

- 1 egg white

Light Italian Chicken Salad with Roasted Garlic

- 1 head garlic
- 1 teas. olive oil
- 12 ounces cooked shredded or chopped chicken breast (about 4 cups)
- 1/2 cup nonfat greek yogurt
- juice of 1 lemon (about 2 tab. )
- salt
- pepper
- 6 roasted red peppers, chopped (about 3/4 of a jar, packed in water)
- 2/3 cup fresh basil, chopped
- 8 leaves Radicchio
- 1/2 cup Parmesan Cheese

Beef Stew with Potato Dumplings

- 1 lb. chuck steak, trimmed and cut into 1-inch cubes

- 1/2 teas. salt

- 3 med. size carrots, cut into 1/4 inch coins
- 1 pkg. (10 oz. ) cremini mushrooms, cleaned and quartered
- 2 cloves garlic, minced
- 1 pkg. (1 lb. ) frozen pearl onions
- 1 1/2 cups low-sodium beef broth
- 3/4 cup dry red wine
- 3/4 teas. dried thyme
- 1 pkg. (17.5 oz.) gnocchi

- 4 cups chicken broth

- 1/2 cup barley (not quick cook)
