ROASTED CHICKPEAS

- Chickpeas (canned)
- Olive oil
- Salt
- Cayenne Pepper
- Directions
- First drain the chickpeas. Toss them with a little olive oil, salt and cayenne. Then arrange the chickpeas on a shallow-sided cookie sheet in a single layer and roast at 400°F for about 1 hour. Shake the pan a few times during cooking.
PASTA WITH CREAM SAUCE

- 1 package (16 ounces) bow tie pasta
- 1 small red onion, chopped
- 3 tablespoons olive oil
- 4 large garlic cloves, minced
- 3/4 cup chicken broth
- 1-1/2 teaspoons minced fresh basil
- 1-1/2 teaspoons minced fresh oregano
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup heavy whipping cream
Grilled Pepper Poppers

Mix dipping sauce ingredients together in a medium-sized bowl and refrigerate
- 1 pound Bacon

- 15 uncooked jumbo pasta shells
- 1-1/2 cups silken firm tofu
- 3 tablespoons grated Romano cheese, divided
- 2 garlic cloves, peeled
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
- 1 can (14-1/2 ounces) Italian diced tomatoes, drained
- 1 can (8 ounces) tomato sauce
- 1/4 cup dry red wine or vegetable broth
- 1/2 cup shredded part-skim mozzarella cheese

- Whipped cream:
- One cup heavy whipping cream (36%-40% milk fat content)
- 1/2 tsp vanilla bean paste (or 1 tsp of vanilla extract)
- 1/2 tsp corn flour
- Chocolate Sauce:
- 3 tsp cocoa powder
- 4 tsp milk
- 2 tsp powdered sugar
- Just a little bit of vanilla paste or vanilla extract
- Layers:
- One cup of sliced strawberries
- One cup of sliced bananas
