- One 15-ounce can (425 grams) chickpeas, also called garbanzo beans
- 1/4 cup (59 ml) fresh lemon juice, about 1 large lemon
- 1/4 cup (59 ml) tahini, we use Krinos or Homemade Tahini (it's easy to make)
- Half of a large garlic clove, minced
- 2 tablespoons olive oil, plus more for serving
- 1/2 to 1 teaspoon kosher salt, depending on taste

- 1 lb. ground beef
- 1 cup coarsely chopped onions
- 2 garlic cloves, minced
- 2 (16 oz) cans light red kidney beans, rinsed and drained
- 1 (15 oz) can black beans, rinsed and drained
- 1 can diced tomatoes
- 1 can mild diced green chilies
- 1 can beef broth
- 2 cups yellow corn
- 1 envelope taco seasoning
- Salt and pepper
- 2 Tbsp. chopped fresh cilantro
- Top w/ sour cream and Fritos

- • 6 ounces grated Parmesan cheese
- • 1/8 teaspoon ground black pepper

- Ingredients
- • 1/4 cup butter
- • 1 cup heavy cream
- • 1 clove garlic, crushed
- • 1 1/2 cups freshly grated Parmesan cheese
- • 1/4 cup chopped fresh parsley
- Directions
- 1. Melt butter in a medium saucepan over medium low heat. Add cream and simmer for 5 minutes, then add garlic and cheese and whisk quickly, heating through. Stir in parsley and serve.
