- 1 1/2 LBS SMOKED FISH

- 1 TBSP LEMON JUICE

Directions Place potatoes in a large saucepan and cover with water
- Ingredients
- 3 pounds potatoes, peeled and quartered (about 9 medium)
- 2 packages (3 ounces each) cream cheese, softened
- 6 tablespoons butter, softened
- 1/4 cup milk
- 3/4 teaspoon seasoned salt
- 3/4 teaspoon pepper
- 1/4 teaspoon onion salt

Rub the spice mix all over the chicken and marinate chicken for 1 hour in the refrigerator
- Spice Mix for chicken, recipe follows
- 1 or 2 lbs of chicken thighs
- 1/4 cup extra-virgin olive oil
- 1 chirizo sausage
- Kosher salt and freshly ground pepper
- 1 Spanish onion, diced
- 4 garlic cloves, crushed
- Bunch flat-leaf parsley leaves, chopped, reserve some for garnish

- 3 cups chicken broth, warm (double for larger recipe)

- 1/2 scallops or 4 large scallops
- 1 pound jumbo shrimp, peeled and de-veined
- 2 lobster tails
- 1/2 cup sweet peas, frozen and thawed
