- 1 box large shells
- 1 egg
- ½ c cottage cheese
- 1 8oz. mozzarella cheese
- 1 lb. tofu

- 1 jar spaghetti sauce
Pickled Peppers

place the banana peppers, jalapeno peppers, and serrano peppers into a large pot
- 1 1/2 pounds banana peppers, cut into 1 inch pieces
- 1 pound jalapeno peppers, cut into 1 inch pieces
- 1/4 pound serrano peppers, cut into 1 inch pieces
- 6 cups vinegar
- 2 cups water
- 3 cloves garlic, crushed
- 1 onion, chopped
Teriyaki Chicken Stir Fry

In a small bowl, whisk together teriyaki sauce, soy sauce and vinegar
- 1 ⁄2 cup teriyaki sauce
- 2 tablespoons light soy sauce
- 1 teaspoon rice vinegar
- 1 tablespoon cornstarch
- 1 tablespoon canola oil
- 1 lb boneless chicken breast, cut into bite-size strips
- 1 (8 ounce) package sliced fresh mushrooms
- 1 (8 ounce) can sliced water chestnuts, drained
- 1 cup shredded carrot
- 2 scallions, sliced thin (white part plus 2 inches of the green part)
LINGUINE WITH SUN-DRIED TOMATOES

Preparation 1. Prepare linguine according to package directions
- 1 (16-oz.) package linguine
- 1 (7-oz.) jar sun-dried tomatoes in oil
- 1/4 cup pine nuts
- 3 garlic cloves, minced
- 1/4 cup extra virgin olive oil
- 1 (4-oz.) package crumbled feta cheese
- 2 tablespoons thin fresh basil strips

SERVE WITH BLUE CHEESE AND RANCH DRESSING
- BRINE:
- FRESH CHIKCEN WINGS/DRUMMIES
- 1/2 CUP SALT
- 1/2 CUP SUGAR
- SPICES/SEASONINGS
- 6-8 CUPS OF WATER
- BRING WATER TO A BOIL. DISSOLVE SALT AND SUGAR. ADD THE SEASONINGS.
- LET THE WATER COOL. POUR OVER THE CHICKEN WINGS. COVER AND MARINADE OVERNIGHT.
- BAKE THE CHICKEN WINGS AT 350 UNTIL BROWN. FINISH ON THE GRILL. COVER WITH CHOICE OF SAUCE.

- 8 tablespoons (1 stick) unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon crushed red pepper

- Salt and pepper to taste
- 1 teaspoon dried oregano
- 4 cups baby spinach
- 1/4 cup parmesan
- 2 tablespoons parsley, chopped
- 1 tablespoons lemon juice

- Finely grate fresh Parmesan for smooth sauce—pre-grated doesn't work as well.

- 2 chicken cutlets, (1/2 pound total), trimmed
- 1.5 teaspoons extra-virgin olive oil, divided
- 5-ounces mushrooms, sliced (*add squash/zucchini/onions)
- 1-2 large cloves garlic, minced
- 1/4 cup white wine
- 1 tablespoons lemon juice
- 1 TBS chopped fresh parsley
- 1 tablespoons capers, rinsed
- 1 teaspoons butter

Coat a large saute pan with olive oil, add the onions and bring to a medium-high heat
- Extra-virgin olive oil
- 1 large onion, 1/4-inch dice
- Salt
- 2 cloves garlic, smashed and chopped
- Pinch crushed red pepper
- 1/2 pound ground beef
- 1/2 pound ground veal
- 1/2 pound ground pork
- 2 large eggs
- 1 cup grated Parmigiano
- 1/4 cup finely chopped fresh Italian parsley leaves
- 1 cup breadcrumbs
- 1/2 cup water
