CANNED DILL PICKLES

1. Wash cucumbers thoroughly and scrub with a vegetable brush, if needed
- 2 1/4 pound pickling cucumbers (about 36)
- 3 3/4 cups water
- 3 3/4 cups white vinegar
- 6 Tbsp pickling salt
- 8 Tbsp of dill seed
- 1 Tbsp mustard seeds
- For spicy pickles add a thai chili to each jar.

- 3 tablespoons balsamic vinegar
- 1 teaspoon agave syrup
- 1/4 teaspoon dried red pepper flakes
- 1/2 lemon, zested and juiced
- 1 avocado, pitted and diced
- 1/4 cup dried cranberries, roughly chopped
- Chopped fresh flat-leaf parsley, for garnish

- 1 cup (4 ounces) shredded Monterey Jack cheese
- 1 cup (4 ounces) shredded Swiss cheese
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon Cajun seasoning
- 1/2 teaspoon minced fresh thyme
- 1/2 teaspoon hot pepper sauce
- 1 garlic clove, minced
- 1/4 cup grated Parmesan cheese
- Toasted baguette slices or pita chips
