- 1/2 bag spinach with stems trimmed
- 2 large gala apples, diced and apple juice to soak apples in if cut up ahead of time

- 1 10 oz tin of cashew halves and pieces
- 3/4 cup sugar
- 1 tsp dry mustard

- 1 1/2 lbs Boneless Skinless Chicken Thighs
- 1/8 tsp salt
- 1/8 tsp pepper
- 1/2 cup diced onion
- 1 cup honey (I used honey and clear Karo syrup because I didn't have enough honey)
- 1/2 cup soy sauce (gluten free)
- 1/4 cup ketchup
- 2 tbsp vegetable oil
- 2 tsp minced garlic
- 1/4 tbsp red pepper flakes
- 2 tbsp cornstarch
- 1 tbsp water
