Blue Cheese Vinaigrette

Serve on lettuce with cranberries, walnuts, and crumbled blue cheese
- Dressing:
- Shallot or onion, microplane
- Garlic (1 clove?), microplane
- 1 pkg Splenda
- 2 T red wine vinegar (try white Balsamic?)
- 1/4 c EVOO
- Blue cheese in dressing, some in salad
- Salt
- White pepper
- (Dijion? - 1 to 2 t)
- Salad:
- Romaine
- Dried Cranberries
- Chopped walnuts
- Blue Cheese
Rag alla Bolognese (Classic Bolognese Meat Sauce)

Make 1/2 the sauce, but only 1 can of diced toms
- 2 small yellow onions, finely chopped
- 4 small or 2 large carrots, cut into 1/4-inch dice
- 4 stalks celery, cut into 1/4-inch dice
- 4 tablespoons butter
- 1/4 cup extra-virgin olive oil
- 3 pounds lean ground beef (90% or leaner)
- 1 teaspoon salt
- 3 cups dry white wine
- 2 cups low-fat milk (or less cream)
- 1/2 teaspoon ground nutmeg
- 2 28-ounce cans plus one 14-ounce can whole peeled tomatoes
Filet Mignon with Blackberry Sauce

Season the steaks to taste
- 2 filet mignon steaks, sized to suit your taste
- Salt and pepper
- 1 Tblspn butter
- 1 Tblspn olive oil
- 2-3 Tblspn chopped shallots
- 6 oz fresh blackberries
- 2 Tblspn Pomegranate liqueur
- ¼ cup low-sodium beef broth
- ½ tsp measurable Splenda
- 2 tsp Herbes de Provence
- ½ tsp salt
- ¼ tsp pepper
- ½ Tblspn butter
Endive, White Beans, and Bacon

Serve with Mediterranean Grilled Lamb Steaks
- 8 slices bacon, coarsely chopped
- 1 medium onion, chopped
- 1 1 1/4- to 1 1/2-pound head curly or Belgian endive, rinsed, leaves torn coarsely
- 2 large garlic cloves, chopped
- 2 15-ounce cans cannellini (white kidney beans), drained well
- 1/3 cup canned beef broth
Gorgonzola- and Mushroom-Stuffed Beef Tenderloin with Merlot Sauce

VERY GOOD! smoked on the grill (small grill pan covered with foil) - apple and pecan
- Beef Tenderloin
- 1 beef tenderloin (about 2 1/2 lb)
- 1 tablespoon butter or margarine
- 1 cup sliced fresh mushrooms (3 oz)
- finely minced onion, garlic
- 1 cup soft bread crumbs (about 1 1/2 slices bread)
- 1/2 cup crumbled Gorgonzola or Roquefort cheese
- 1/4 cup chopped fresh parsley
- 1 tablespoon olive or vegetable oil
- 1/4 teaspoon coarse salt (kosher or sea salt) or regular salt
- fajita seasoning (of course)
- Merlot Sauce
- 1/2 cup currant jelly (or DLM red raspberry) (1/3 c)
- 1/2 cup Merlot, Zinfandel or nonalcoholic red wine (1/3 c - Apothic)
- 1/4 cup Progresso® beef flavored broth (from 32-oz carton) (used more)
- 1 tablespoon butter or margarine
Blueberry Feta Salad with Lemon Poppyseed Dressing

Gooseberries Fresh Market
- For the Dressing:
- 6 c. mixed greens
- 1 c. blueberries
- 4 oz. crumbled feta cheese
- 1/4 c. almonds
- red onion slivers, to taste
- 1/3 c. olive oil
- 1/3 c. golden balsamic vinegar
- 1 Tbsp. lemon juice
- 1 Tbsp. honey
- 1 tsp. poppy seeds
- 1/4 tsp. pepper
Blueberry Cream Cheese French Toast Casserole

Place bread cubes in a greased 13 X 9 inch casserole dish
- Blueberry Sauce:
- 6 slices white bread, crust removed and cut into cubes
- 1 package cream cheese, cut into 1 in. cubes
- 1/2 cup blueberries
- 6 eggs
- 1 cup milk
- 1/6 cup maple syrup (or honey)
- ¼ t cinnamon
- 1 cup sugar
- 2 tablespoons cornstarch
- 1 cup water
- 1 cup blueberries
- 1 tablespoon butter
Sophia Loren's Chocolate Mousse

- 1 c. heavy whipping cream
- 1 small package instant chocolate pudding
- 1 c. milk.
- 1 T. orange liqueur or frozen orange juice concentrate
Grilled Shark To Die For

Directions Combine soy sauce, orange juice, ketchup, chopped parsley, lemon juice, pepper, and garlic
- 1/2 cup soy sauce
- 1/2 cup fresh orange juice
- 1/4 cup ketchup
- 1/4 cup freshly chopped parsley (whatever)
- 1 tablespoon fresh lemon juice
- 1 teaspoon freshly ground black pepper
- 2 large cloves garlic, pressed
- 2 shark steaks, 6 ounces each
- apricot jAM
- 1 T cornstarch
Homemade Chili Sauce

A homemade substitute for Heinz chili sauce made with tomato sauce and paste, lemon juice and a mix of seasonings
- 8 ounce can of tomato sauce
- 2 tablespoons of tomato paste
- Juice of 1/2 of a fresh lemon
- 2 tablespoons of light brown sugar
- 1/4 teaspoon of dry mustard
- 1/4 teaspoon of onion powder
- 1/4 teaspoon of garlic powder
- 1/4 teaspoon of chili powder
- Couple dashes of Worcestershire sauce
