Cherries Jubilee - for Valentine's Day TEST

Standard drill
- 1/3 c spec brown sugar
- 1 T soy
- 1/8 t salt
- 1/2 t vanilla paste
- 1/2 T Navan
- 1 stick butter
- 1 1/4 c flour
- 1/4 c Bing cherries, 1/8 c tart cherries + 1/8 c reg sugar
- 1/2 t (scant - loose pack) orange zest (approx 1/4 orange)
- 4 squares white chocolate, chopped

- 2 cups all-purpose flour
- 1 large egg
- 4 tablespoons extra-virgin olive oil
- Ice water as needed
Prosciutto-Wrapped Beef Cubes with Mustard Pan Sauce

Sprinkle beef on all sides with black pepper
- 1 pound beef filet, cut into roughly 2-inch cubes to make 12 pieces
- Freshly ground black pepper
- 1/4 pound prosciutto
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 small shallot, diced
- 1/2 cup chicken stock
- 1 tablespoon coarse-grain mustard
- 2 tablespoons heavy cream
- 2 tablespoons freshly chopped parsley leaves
Homemade Ricotta Cheese

Set a large sieve over a deep bowl
- 4 cups whole milk
- 2 cups heavy cream
- 1 teaspoon kosher salt
- 3 tablespoons good white wine vinegar
Oven Fried Chicken

Easy way to fix chicken instead of grilling
- 1 (2 to 3 pound) whole chicken, cut into pieces (2 thighs, 2 legs, 2 wings)
- 1 cup dried bread crumbs (used Panko)
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika (used a sprinkle of cayenne instead)
- 1 cup mayonnaise
BEEF PICADILLO

- 4 oz. diced chorizo
- 1 large onion, diced (about 2 c.)
- 1 large red bell peppers, seeded and chopped (about 1 c.) (Karen - sub pablano?)
- 1 tsp. salt, plus more to taste
- 1 lb. ground beef
- 4 garlic cloves, chopped
- 2 tsp. ground cumin (Karen - reduce this)
- 2 tsp. chili powder
- 1/4 tsp. ground cloves
- 1/4 tsp. ground allspice
- 1 bay leaf
- 2 c. canned crushed tomatoes
- 1/2 c. pimento-stuffed green olives, sliced plus 2 tbsp. brine
- 1/2 c. raisins
- Black pepper, to taste
- Serve with rice, avocado, cilantro and lime
Salad with Warm Goat Cheese

very good... even the goat cheese turned out good
- 1 (11-ounce) log plain or herbed Montrachet
- 2 extra-large egg whites, beaten with 1 tablespoon water (1 white, 1/2 T water)
- Fresh white bread crumbs (panko)
- 2 tablespoons good cider vinegar (1 T)
- 2 tablespoons good Champagne vinegar (1 T)
- Pinch sugar
- 1/2 teaspoon kosher salt (1/4 t)
- 1/4 teaspoon freshly ground black pepper (some)
- 1 extra-large egg yolk
- 1 cup good olive oil (3/8 c?)
- Enough mixed salad greens for 6 servings
- Olive oil and unsalted butter, for frying
Texas Style BBQ Sauce

- 14 oz ketchup
- 1/2 c water
- 1/2 c cider vinegar
- 2 T worcestershire sauce
- 1 t salt
- 4 t chili powder
- 1 t pepper
- 2 t fresh lemon juice
- finely grated onion & garlic
- 2 t Splenda brown sugar

- 1/2 # lean ground beef
- 3 cups nonfat beef broth
- 2 garlic cloves, minced
- 1 tablespoon tomato paste
- 2 cups chopped cabbage
- 1/2 yellow onion
- 1/2 cup chopped carrot
- 1/2 cup green beans
- 1/2 cup chopped zucchini
- 1/2 teaspoon basil
- 1/2 teaspoon oregano
- dash hot sauce
- salt & pepper
