Steak Tartare (Tartare de Filet de Boeuf)

Place beef in the freezer to firm, about 30 minutes; this will make it easier to chop finely
- cut beef tenderloin
- 1 1⁄2 tbsp. Dijon mustard
- 2 egg yolks
- 1 ⁄4 cup canola oil
- 6 tbsp. salt
- packed capers, rinsed, drained, and minced
- 2 tbsp. minced, pitted green Niçoise olives
- 2 tbsp. minced parsley
- 1 1⁄2 tbsp. Worcestershire sauce
- 1 ⁄4 tsp. hot sauce, such as Tabasco 4 cornichons, minced
- 1 small yellow onion, minced Kosher salt and freshly ground black pepper, to taste
- French fries, for serving
- Mixed salad greens, for serving
Balsamic Glazed Steak Rolls

- For the Rosemary Balsamic Glaze:
- 8 thin slices sirloin or flank steak (length and width according to personal preference)
- Extra virgin olive oil
- Salt and freshly ground black pepper
- Fresh rosemary, chopped
- 1 red bell pepper, sliced into thin strips
- 1 green bell pepper, sliced into thin strips
- 1 medium zucchini, sliced into thin strips
- 1 medium yellow onion, halved and then thinly sliced
- A few white button or cremini mushrooms, cut into thin strips
- 1 teaspoon extra virgin olive oil
- 1 large clove garlic, minced
- 1/4 cup dark balsamic vinegar
- 2 tablespoons dry red wine
- 2 teaspoons brown sugar
- 2 sprigs fresh rosemary
- 1/4 cup Progresso beef broth
Caramelized Onion and Gorgonzola Pizza

Very yummy "white" pizza. The original recipe came from the gorgonzola package
- Basic Pizza - as advertised:
- 1/8 cup butter
- 2 large Vidalia onions, thinly sliced
- 1/2 cup diced red onions
- 2 teaspoons sugar
- 1 (10 ounce) package refrigerated pizza dough OR 1 pre-baked pizza crust OR flatbread
- 1 pound Gorgonzola cheese, crumbled
- Optional:
- mushrooms
- crumbled fried bacon
- shaved Parmesan cheese (really not optional, but my addition)
- But wait, there's more
- Jenny's garlic alfredo sauce:
- butter
- garlic
- 2 t flour
- 1/4 c chicken broth
- 1/4 c milk
- 1/2 t parsley flakes
- S & P
- Parm
- Seafood (cooked shrimp, fake crab meat, whatever)
Grilled Leg of Lamb Steaks with Mint Honey Vinaigrette

In a large baking dish, combine the yogurt, olive oil, garlic, cumin, pepper, tarragon, mint, and rosemary
- For the vinaigrette:
- 4 lamb steaks (cut from the leg, about 1 1/2 inch thick)
- 2 tbsp plain yogurt
- 1 tbsp olive oil
- 4 cloves chopped garlic
- 1 tsp ground cumin
- 1 tsp fresh ground black pepper
- 2 tbsp fresh tarragon, chopped
- 2 tbsp fresh mint, chopped
- 1 tbsp fresh chopped rosemary
- salt to taste
- 2 tbsp honey
- 2 tbsp sherry vinegar
- 1/4 cup olive oil
- 2 tbsp fresh mint, chopped
- salt and fresh ground black pepper to taste
Cape Fear Punch

For the base: Pour the rye whiskey into a 4-quart container
- 750 ml rye whiskey
- 750 ml water
- 1/2 cup Demerara sugar
- 3 bags green tea
- 375 ml rum
- 375 ml Cognac
- 4 whole lemons
- 2 small oranges, thinly sliced
- 4 small lemons, thinly sliced
- 2 (750 ml) bottles sparkling wine or Champagne
- 1 liter seltzer or sparkling water
- Ice block
- Freshly grated nutmeg
Beef and Guinness Stew

- 2 pounds chuck roast, trimmed, cubed
- 3 tablespoons oil
- 2 tablespoons flour + more
- Salt and freshly ground black pepper
- Pinch of cayenne
- 2 large onions, coarsely chopped (large chop)
- 1 large garlic clove, rough chop
- (white wine to deglaze)
- 2 tablespoons tomato paste, dissolved in beer from marinade, with beef broth
- 2 bottles Guinness
- 2 cups largely diced carrots (more)
- (celery, mushrooms?)
- Sprig of fresh thyme (+ rosemary?)

* Heat 1 tablespoon oil in a stock pot (or a very large, deep sauté pan) over medium-high heat
- 3 tablespoons olive oil, divided
- 2 boneless skinless chicken breasts, cut into bite-sized pieces
- 1 pound andouille sausage, thinly sliced into rounds
- 3 small bell peppers, cored and diced (I used a yellow, red and green bell pepper)
- 2 ribs celery, diced
- 1 jalapeño pepper, seeded and finely chopped
- 1 white onion, diced
- 4 cloves garlic, peeled and minced
- 1 (14-ounce) can crushed tomatoes
- 3 -4 cups chicken stock
- 1 1/2 cups uncooked long grain white rice
- (1 carrot, sliced)
- 2 tablespoons Cajun seasoning or Creole seasoning
- 1 teaspoon dried thyme, crushed
- 1 /4 teaspoon cayenne pepper
- 1 bay leaf
- 1 pound raw large shrimp, peeled and deveined
- 1 cup thinly-sliced okra* (1 1/2 t file powder)

Braised Pork Chops and Fennel

One pan is all you need to make this fast braise of juicy pork chops and tender fennel
- 1 medium fennel bulb (about 12 ounces), stalks removed and discarded
- 2 teaspoons kosher salt, plus more as needed
- 1/2 teaspoon freshly ground black pepper, plus more as needed
- 3/4 teaspoon hot paprika
- 3 (1-inch-thick) bone-in pork loin chops
- 2 tablespoons olive oil
- 1/2 medium yellow onion, thinly sliced
- 2 medium garlic cloves, thinly sliced
- 1 teaspoon finely chopped fresh thyme leaves
- 1/2 cup low-sodium chicken broth
- 1/2 cup dry vermouth
- 1 teaspoon Dijon mustard
- 1/2 teaspoon finely grated lemon zest
- 1 teaspoon freshly squeezed lemon juice (just a squeeze)
