Chicken and Rice

Using a heavy dutch oven or soup pot, sauté the onions for about 5 minutes
- 1 small onion, diced
- ¼ cup olive oil
- 4 oz sliced mushrooms
- ½ tsp minced garlic
- 1-2 jalapeno peppers, seeded and minced
- ¼ - ⅓ cup flour
- Salt
- Pepper
- 1-1 ½ lb boneless, skinless chicken breasts, cut into bite size pieces
- ¼ cup olive oil
- 1 14.5-oz can chicken stock
- 1 green bell pepper
- ¾ cup long grain brown rice (not quick cooking – see note)
- 2 small tomatoes cut into wedges
Mushroom and Red Wine Steak Sauce

Heat 2 tablespoons of the butter in large skillet over medium heat until melted
- 4 tablespoons (1/2 stick) unsalted butter
- 1/2 teaspoon crushed red pepper
- 1 medium shallot, thinly sliced
- 24 ounces cremini mushrooms, halved
- Kosher salt and freshly ground black pepper
- 1 tablespoon minced fresh thyme
- 2 cloves garlic, grated on a rasp grater
- 1/2 cup dry red wine
Hamburger Potato Buns

We love the simplicity of these buns, which are ideal for serving a crowd of hungry burger fans
- 3 cups King Arthur Unbleached All-Purpose Flour
- 1/4 cup potato flour or 1/2 cup dry potato flakes
- 1/4 cup Baker's Special Dry Milk or nonfat dry milk
- 2 tablespoons sugar (brown?)
- 1 1/4 teaspoons salt
- 2 teaspoons instant yeast
- 4 tablespoons unsalted butter
- 1 cup lukewarm water ( 1 egg?)
- 1 tablespoon unsalted butter, melted
Slow Cooker Whole Cauliflower

If cauliflower has greens still attached to the bottom, leave them on
- 1 large whole cauliflower
- 4 cloves garlic, minced
- 4 tablespoons melted butter
- 1 tablespoon finely chopped sage
- 1 lemon, juiced and zested
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 3/4 cup powdered Parmesan cheese
- 2 tablespoons finely chopped fresh parsley
Low-fat, low-sugar Ice Cream

Make sure the milk and cheese are very cold
- 15 oz low-fat ricotta cheese
- 1 cup skim milk
- 1 cup low-fat buttermilk OR 1 cup fat free yogurt
- 1 tsp vanilla
- ½ cup measurable Splenda

- 2 cups heavy cream
- 1/4 cup white sugar
- 1 pinch salt
- 1 teaspoon vanilla extract (plus - my add)
- 3 egg yolks (add 1-2 extra yolks - my add)
- 4 tablespoons white sugar
- 1 c cream
- 1/8 c white sugar
- 1 pinch salt
- 1/2 + t vanilla
- 2 egg yolks
- 2 T white sugar
Emeril's Oven Roasted Chicken Wings

- 4 pounds chicken wings, wing tips removed, separated at the joints
- 1/4 cup fresh squeezed lemon juice
- 1 tablespoon freshly ground black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons salt
- 2 teaspoons dried thyme
- 1/2 teaspoon cayenne
- 4 tablespoons butter, melted
- Your favorite sauce, for serving, such as barbecue sauce, ranch dressing, or blue cheese dressing, optional
Soft Pretzels

In large bowl, combine 2 cups flour, sugar, undissolved yeast, and salt
- 4 to 4-1/2 cups all-purpose flour
- 2 tablespoons sugar
- 1 envelope Fleischmann's® RapidRise Yeast
- 1-1/2 teaspoons salt
- 1 cup milk
- 1/2 cup water
- 2 tablespoons vegetable oil
- 2 eggs, lightly beaten
- Coarse salt, grated Parmesan cheese, or Spice Islands® Poppy Seed or Sesame Seed
Oven Roasted Smoked Sausage and Potatoes

Add carrots and celery, reduce sausage and potatoes
- 1 1 1 package of smoked sausage, sliced into rounds
- 1 1 1 large onion, peeled and chopped
- 5 5 1/2 large potatoes, peeled and chopped into 1/2 inch cubes
- olive oil/bacon grease
- fine sea salt
- freshly ground black pepper
- sweet paprika?
- dried thyme?
- handful a handful of grated strong cheddar cheese
Lamb Kabobs

- 12 (6-inch) wooden skewers
- 1 1/2 pounds ground lamb
- 2 scallions, finely chopped
- 2 teaspoons onion powder
- 2 teaspoons chopped fresh oregano leaves
- 1 teaspoon chopped fresh rosemary leaves
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1/2 teaspoon dried thyme
- Salt and freshly ground black pepper
- Oil, for brushing
- 1 bag pita bread, at least 6 loaves
- Tzatziki Sauce
- 2 cups Greek strained yogurt
- 1/2 cucumber, seeded and chopped
- 1 garlic clove
- 2 1/2 teaspoons hot sauce (recommended: Frank's Red Hot)
- 1 teaspoon lemon juice
- Salt and pepper to taste
